my daughter is Vegetarian, here's is some recipes i've made for her & she really liked em

Portobello Tacos
2 cups chopped Portobello mushrooms
1 cup chopped broccoli
1/2 cup chopped carrots
1/2 cup sliced onion
1 teaspoon olive oil
1 cup chopped lettuce
1/3 cup chopped tomato
1/2 cup guacamole
4 - 6 flour tortillas
Fry up the onions, mushrooms, broccoli, and carrots in olive oil. When cooked to tenderness, remove and make up tortillas with veggies, chopped tomato, lettuce, and guacamole. Tortillas may be warmed up ahead of time in the microwave or on a stovetop pan.

Oven-Roasted Vegetables with Orange and Sage
2 tbsp. olive oil
approx. 2 lbs of vegetables
juice and grated rind of a medium orange
4 sage leaves finely chopped
1/2 tsp sugar
heat to 375 degrees.Coat a large roasting tin with the olive oil. Peel or clean the vegetables as appropriate, cut them into small chunks or thin slices, and place them in the tin. Roast in the oven for 30 to 40 minutes, or until completely cooked, turning occasionally. The cooking time will depend on the mix of vegetables.In a small bowl mix the orange juice and rind, sage and sugar. Pour this over the vegetables. Turn the vegetables over a couple of times to ensure the juice is well mixed.

Butternut Squash & Apple Bake
4 tbsp. cooking oil
1 large onion, peeled and chopped
1 large carrot, peeled and cut into slices
2 celery stalks, chopped
4 mushrooms, cleaned and sliced
1 medium butternut squash, peeled and cut into small chunks
1/2 cup of water or vegetable stock
Salt and pepper for seasoning
1/2 cup of chopped pecans or walnuts
1 cup of breadcrumbs
1 large cooking apple
heat to 375 degreesHeat half the oil in a pan. Add the chopped onion and cook for five minutes or until it starts to brown. Add the carrot, celery, mushrooms and squash. Continue cooking over a medium heat for five to ten minutes. Then add the water or stock along with the seasoning. Simmer gently for a few more minutes, or until the vegetables are just tender.In a separate pan or skillet, gently saute the nuts in the remaining oil. After a few minutes, stir in the breadcrumbs. Remove from the heat.Finally, peel the apple and cut it into small chunks don't do this ahead of time or the apple will turn brown. put the vegetables in a oven-proof dish and add in the apple. Cover with an even layer of the breadcrumb mixture.Bake in the oven for half an hour, or until the topping is a golden brown

I'm a vegetarian and also a very fussy eater! Here is one of my favourites that my mum has cooked me since i was little, it is extremely simple and is themed on Japanese cuisine, all the flavours blend together beautifully.

Sushi white rice/brown rice (japanese nori seaweed if you like!)
Fried sweet potato
Grilled tofu with chives and soy sauce
Carrots boiled with mirin
Broccoli
One egg omelette cut into strips and rolled

It's as simple as that!
The reason i like it so much is because it is so satisfying and perfect for vegetarians. It has the main carb portion (rice), really healthy proteins (egg and tofu) and 3 portions of delicious vegetables. There is also a range of textures, which is interesting to the palette.

I often halve the portion size if i am trying to lose weight and my secret tip is to use chopsticks! You concentrate a lot more on picking up your food this way which makes you appreciate the food a lot more, as well as making you feel fuller!

Stuffed Bell Peppers. Make a Spanish rice as you like (substitute meat with tofu). Stuff the bell peppers with the rice mixture, grate some cheese over the top and bake. Yum!

My sure and tried vegatable stir fry with sesame oil.
bell pepper, red, and green
bean sprouts
water chestnuts
snow peas
fresh brocolli
onion (red)
garlic
fresh ginger
splash of soy sauce
and sesame oil for frying.
