I've heard of egg sandwhiches and tomato sandwhiches, but what do you put with them? All I ever make are ham and swiss with mayo and its getting pretty boring, how do you make other types of sandwhiches?

Simple Tomato Sandwich
1 servings 5 min 5 min prep

2 slices bread (Homemade strongly recommended, cracked wheat is my specific favorite)
1 medium organic tomato or garden tomato, room temperature or fresh from the stalk (do NOT attempt this with pale, store-bought types!)
3 tablespoons Miracle Whip or mayonnaise (adjust amount to your taste; plain ol' mayo may be substituted for the faint of heart, but I can't s)
salt, to taste

Toast bread.
Slice tomato.
When bread is adequately toasted, liberally spread both sides with Miracle Whip (or butter one side with Miracle Whip on the other).
Lay tomato slices on one side of bread.
Salt tomato to taste.
Slap that baby together and savor summer at it's best!

Reggae Wraps
4 servings 15 min 15 min prep

1 lb boneless chicken breasts
olive oil
1/2 teaspoon ground paprika
1 teaspoon garlic powder
1/2 teaspoon ground ginger
salt
pepper
1 pinch cayenne (optional)
1 bell pepper, any color, seeded and sliced in strips
1 onion, thinly sliced
1 tomato, seeded and diced
4 flat bread
Cilantro Cream Sauce
1/2 cup sour cream
1/8 cup finely chopped cilantro
1 chopped green onion
2 teaspoons fresh lime juice
salt
pepper

Mix sauce ingredients together and refrigerate.
In a non stick skillet over moderate heat warm each flat bread on both sides until warm and soft. Remove from pan, cover with foil and place under a kitchen towel to keep warm.
Pound chicken breasts a little to flatten and create a more uniform thickness.
Mix ginger, paprika and garlic powder together, adding salt, pepper and cayenne to taste. Drizzle a little olive oil on the breasts and rub with the spice mixture.
Slice each breast into strips and saute until browned and thoroughly cooked. Add a little oil if needed to prevent sticking. Remove chicken from pan or push to the sides, away from hottest part of pan.
Add onions and bell peppers to pan and cook just until crisp tender or cooked to your liking.
To serve:.
Spread cream sauce on a warm flat bread. Add chicken strips, peppers, onions and tomato.
Top with additional cream sauce, more salt, pepper or spices IF DESIRED. A squirt of fresh lime is also very tasty and refreshing. Customize it to your liking.
Fold in half like a taco or roll up like a burrito or a wrap.

Mom's Sit Sandwich
6 servings 2 hours 2 hours prep


1 large round loaf French bread
1 jar marinated artichoke hearts, drained,liquid reserved
1/2 cup mayonnaise
3 large tomatoes, sliced
3 ounces thinly sliced salami
1/2 lb thinly sliced turkey breast
1/4 lb cheese slices, any kind
1 (2 1/2 ounce) can sliced ripe black olives, drained
1 purple onion, thinly sliced


Cut loaf of bread in half horizontally and hollow out the soft bread from both halves, leaving a shell about 3/4-inch thick.
Reserve soft bread for another use.
In small bowl, combine artichoke liquid with mayonnaise and spread onto bread shells.
In bottom half, layer ingredients at least three times until mounded high, beginning and ending with tomatoes.
Place top half of bread over mound of ingredients.
Wrap entire loaf with plastic wrap.
This must be assembled at least 2 hours before serving, but can be assembled up to 8 hours before serving.
Refrigerate.
Before serving, place sandwich (wrapped in plastic) on a hard surface and SIT ON IT!
This smashes the ingredients together and makes it easy to serve.
Do not omit this step, strange as it seems, as this step is what makes the sandwich delicious.
Slice the loaf into wedges to serve.

Try adding a little pesto to your Mayo, it really adds flavor to a sandwich.

I like to take a flour tortilla and spread cream cheese over it (garlic cream cheese is my favorite) then I sprinkle spinach on half, a layer of turkey and roll it up. Then you can either cut it in half or slice it for spirals. This tastes and looks great. You can also add peppers or olives or whatever you think might be good.

Try different cheeses. My new favorite is Havarti

Try changing the bread you use, croissants, french, rye, wheat, white etc...

Chunky Chicken salad
Leftover chicken cut into small chunks (you can also use canned chicken)
Mayo to taste
a squirt of mustard to taste
salt and pepper
toasted chopped pecans
crisp broken up bacon
diced dill pickle
Mix it all together and put it on your bread.

I hope this helps with your brown bag blues.

DIY fajitas or other "international" tastes. Visit your local Mexi-market or Asian grocery and pick up flour tortillas or corn same for your fried yearnings or Asian "wraps" used in egg rolls or Philippine Island treats. Consider the home-made burrito with carnitas (shredded pork), chicken or beef, and go from there, especially if you like piquant salsa or hotsauce. Add some rice and refried beans, guacamole and sour cream and viva Mexico American style and so much better than Toxic Hell of Taco Bell.
I like cream cheese and Italian salami rolled in flour or corn tortillas and deep fried with jalapeno peppers or habanero for total world confusion and a break from bologna or PBJ. Go Thailand and put rice, crab, shrimp, etc. in your Asian wraps along with a dollop of red or green curry.
Here's an egg salad variation on rye or in a pita or flour tortilla:
6 HB eggs chopped, 2 T ea. Mayo, Pace Picante (mild to hot) and Dijon Mustard. Add 1 can chopped olives and 1/2 medium onion and voila, the good life for a brown bagger!

Cucumber and Watercress Sandwich


3/4 cup and 2 teaspoons cucumber, peeled and finely chopped
1/8 teaspoon salt
1/8 teaspoon ground black pepper
1-1/4 teaspoons chopped fresh chives
1 tablespoon and 1/4 teaspoon butter, softened
2 slices whole wheat bread, crusts removed
1-1/2 teaspoons mayonnaise
3 tablespoons and 1/2 teaspoon trimmed and coarsely chopped watercress

Place cucumber in a medium bowl. Mix in salt. Cover and set aside for approximately 30 minutes.
Mix ground black pepper, chives and butter into the bowl with the cucumber.
Spread whole wheat bread slices with mayonnaise. Top 10 slices with equal portions of the cucumber mixture, then with equal portions watercress. Cover with remaining 10 slices of bread. Cut into triangles and serve. Makes 2 servings

There are so many options! I get bored of eating the same kind of sandwich too....
Today I brought a package of cesar salad. I like to put chicken or sliced turkey on it.
You can make any kind of sandwich. Get yummy french bread. I like to get turkey from the deli and make a turkey and cheese sandwich with ranch. Sometimes I make a chicken and cheese quesadilla the night before, and bring it for lunch.

Bacon, Lettuce and Tomato (BLT), Chicken Salad or Tuna Salad, make with canned Tuna, Chicken egg and mayo. Ham Salad made with chopped up ham,relish and egg. Grilled Cheese or Grilled ham and cheese. Rueben (Cornbeef,swiss cheese thousand island dressing, s-kraut, on grilled rye bread). Really almost anything can be turned into a sandwich... hope this helps...

My personal, delicious favourite!

GRIDDLED COURGETTE AND CREAM CHEESE

Pack this with you when you're on the go..courgettes are amazing when you griddle them. Enjoy their slightly smoky flavour in this different sarnie!


What you need:

1 large courgette
Olive oil
Lemon/Lime juice
Cream cheese-lowfat, plain or with garlic and herbs
1 piece french bread of ciabatta
Parsley or coriander leaves (optional)
Sea salt

Method:

1. Preheat the griddle pan to hot.

2. Slice the courgette thinly lengthways. Brush one side of each slice with a little oil.

3. Lay the courgette slices oiled sides down on the griddle.
Cook for 2 mins on each side or until done.

4. Squeese lemon or lime juice over the criss-cross browned courgette. Sprinkle with salt.

5. Spread cream cheese on bread. Layer on courgettes. *** torn herbs is using. Top sandwich or leave open. Delicious!

As a variation enjoy slatherings of hummus instead of cream cheese.

I've also been trying 'superfood' rolls in my packed lunches.

Get a wholegrain roll, topped with seeds and grains if possible and spread a thin layer of low fat soft cheese/hummus etc over each side.
Add a layer of rocket and watercress leaves and if you like, a few slices of cucumber. The secret to this roll is the sprouting seeds that i generously add to my roll, they are crispy and delicious and so good for you!
Wrap your roll tightly in cling film and you're ready to go!

Chicken Salad (chicken chunk, miracle whip, celery, pepper)

Turkey & Salami

Try making a wrap tortilla wrap instead. They're a nice change from usual bread.

There are so many meats and breads, the possibilities are endless. Just take a browse around the grocery store and use your imagination :)

I bring hummus wraps a lot of the time.

Roll a tortilla around a bunch of hummus with some spinach, tomataoes, black olives. It's good and good for yah.

try a veggie sandwich, use all your favorite veggies & instead of mayo, use ranch dressing, instead of bread use a wrap.
a seafood pita with lettuce, tomatoe & cheese or you could try a cream cheese & apple sandwich

Try grilled cheese with different types of cheese and bread, like Munster and french bread. And add some pesto to your tomato sandwich.
