Who loves cupcakes? or Who just like to bake cupcakes?
I love them soo much. I bake all the time. Does anyone have any ideas on baking cupcakes.. Thanks.. :)

Me too! I want the hostes cup cake filler at bed bath & beyond.
I use marbles on the side at Valentines day makes a heart shape on the outside of the paper muffin cups. I use different types of jello mix flovors for colors. I dye frosting to match the holiday but here is a new recipe I found and used this weekend: Boston cream Pie Minis:
1 pkg yellow cake mix
1 cup cold milk
1pkg (4-serving size) Jello Vanilla Flavor instant pudding & pie filling
1 1/2 cups Cool Whip divided
4 squares Bakers Chocolate-Semi-Sweet Baking chocolate
Pre heat oven to 350 make cake batter and bake in 24 muffin cups ( i spray mine with pam) as directed on package cool 10 mins in pans move to wire racks
Pour milk in a large bowl add pudding mix let stand five min cut cup cakes horizontally in half stir 1/2 cup cool whip into pudding spoon about 1 Tbsp on each bottom half of cup cakes put the top back on
Microwave remaining whip topping and the chocolate in small bowl 1 1/2 min or untill chocolate is almost melted stirring after one min stir until chocolate is melted then frost top of each cup cake Refrigerate 15 min before serving.
They are sooo good YUMMY

Chocolate Cupcakes

INGREDIENTS
1 1/3 cups all-purpose flour
1/4 teaspoon baking soda
2 teaspoons baking powder
3/4 cup unsweetened cocoa powder
1/8 teaspoon salt
3 tablespoons butter, softened
1 1/2 cups white sugar
2 eggs
3/4 teaspoon vanilla extract
1 cup milk

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Line a muffin pan with paper or foil liners. Sift together the flour, baking powder, baking soda, cocoa and salt. Set aside.
In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Add the flour mixture alternately with the milk; beat well. Fill the muffin cups 3/4 full.
Bake for 15 to 17 minutes in the preheated oven, or until a toothpick inserted into the cake comes out clean. Frost with your favorite frosting when cool.

Carrot Cupcakes

These cupcakes are reminiscent of your favorite carrot cake, but it’s the spicy ginger scented icing that makes these a stand out.

Ingredients

For the cupcakes:
1 cup flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup sugar
3/4 cup vegetable oil
2 large eggs
1 1/2 cups finely grated peeled carrots
1/4 cup drained canned crushed pineapple in juice

For the icing:
4 ounces, cream cheese, at room temperature
1/4 cup, unsalted butter, at room temperature
2 1/4 cups 10-X sugar – sifted
1/4 cup, finely chopped crystallized ginger
1 teaspoon, ground ginger
a pinch of salt

Method
Preheat oven to 350°

Line twelve muffin cups with paper liners

Sift first 5 ingredients into medium bowl. Using electric mixer, beat sugar, oil and eggs in large bowl until well blended. Add dry ingredients to egg mixture in 2 additions, beating until well blended after each addition. Mix in carrots and pineapple. Spoon batter into prepared muffin cups, filling each 3/4 full.
Bake cupcakes until tester inserted into center comes out clean, about 30 minutes. Turn cupcakes out onto racks and cool completely. [Can be made 1 day ahead. Cover; store at room temperature].

Meanwhile, make the icing:

Use an electric mixer to beat together the cream cheese and butter until creamy. With the mixer on low speed, beat in the 10-X [confectioners’] sugar, adding only 1/2 cup at a time so that the sugar doesn’t fly all over the place. Increase the mixer speed to medium-high, and continue beating until light and fluffy. Add the crystallized ginger, ground ginger and salt, beating until well mixed. Spread the frosting over the tops of the cupcakes and refrigerate until ready to serve - or for up to 8 hours.

i love cupcakes too!i love to bake!one time i made over 100 cupcakes in just one night.one thing i like to do is pour some of the batter in and then add some chocolate chips or another good filling and then add some more batter and in the end you can have a cupcake with a yummy filling

INGREDIENTS

2 teaspoons vanilla extract

1 cup semisweet chocolate chips
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Line 24 muffin cups with paper liners.
In a large bowl, mix together flour, 2 cups sugar, cocoa, 1 teaspoon salt and baking soda. Stir in oil, water, vinegar and vanilla until blended. Pour mixture into prepared muffin cups, filling each 2/3 full.
To make the filling: In a medium bowl, beat together the cream cheese, egg, 1/2 cup sugar and 1/4 teaspoon salt until light and fluffy. Stir in chocolate chips. Drop a heaping teaspoonful of the cream cheese mixture into each cupcake. Bake in the preheated oven for 25 minutes. Allow to cool.

Peaunut Butter Brownie Cup
1 package (21-1/2 ounces) fudge brownie mix
15 to 18 miniature peanut butter cups

Mix brownie batter according to package directions. Fill paper-lined or foil-lined muffin cups two-thirds full. Remove wrappers from peanut butter cups; set one in each muffin cup and press down until batter meets the top edge of the candy. Bake at 350° for 20-25 minutes. Yield: about 1-1/2 dozen. Editor's Note: The Test Kitchen staff found Betty Crocker's Fudge Brownie mix bakes best for this recipe.

If it's variety you want, mix a teaspoon of your favorite extract into the cake batter or the frosting. I like putting a capful of peppermint extract into the frosting and making mint chocolate cupcakes. Just pick your favorite and mix it up...as long as it's a good flavor combination you can't go wrong.

I like to take that pilsbury white cake mix and put that into cupcakes and then make a little powder sugar butter frosting and put that on top.
