here's a couple good ones, i've tried em & my family loved em
Chocolate Cake
1 cup all-purpose flour
1/2 cup whole-wheat flour
3 tablespoons cocoa
1 teaspoon baking soda
3/4 cups sugar
1/2 teaspoon salt
5 tablespoons canola oil
1 tablespoon plain unflavored distilled vinegar
1 teaspoon vanilla extract
1 cup cold water
Preheat oven to 350 F. Coat a square 9-by-9-inch pan with canola oil spray. Or, if cupcakes are desired instead of a cake, spray interior of a muffin pan with the spray, set it aside and continue with the recipe using a lightly oil-sprayed pan or bowl to mix the batter.In the center of the pan, gently pour in the flours, cocoa, baking soda, sugar and salt to make a large mound. With the back of a tablespoon, make 3 hollows in the mound. Pour the oil into one, vinegar into another and vanilla into the third. Pour the cold water over all. Mix well with a spoon until the flour cannot be seen and the mixture is almost smooth. The cake is done when a toothpick inserted into the middle comes out clean.Cool the cake on a rack for about 10 minutes, and for cupcakes, about 5 minutes, before turning out of the pan and onto the rack to finish cooling. Cupcakes should easily drop out of the pan and onto the rack. For the cake, slip a thin-bladed knife between the cake and sides of the pan to help loosen it. Place the rack on top of the cake so that the legs are facing up. Holding the rack firmly against the pan, invert the pan and gently shake the cake out and onto the rack. Cool the cake completely before serving.
Apple Cranberry Crisp
5 cups thinly-sliced peeled apples
1 cup cranberries
2 tablespoons granulated sugar
1/2 cup quick-cooking rolled oats
1/3 cup packed brown sugar
3 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
2 tablespoons margarine
1/2 cup vanilla or lemon nonfat yogurt
In a large mixing bowl combine apples, cranberries, and granulated sugar. Transfer to a 2-quart square baking dish or a 9-inch pie plate In a small bowl combine oats, brown sugar, flour, and cinnamon. Cut in margarine until crumbly. Sprinkle oat mixture evenly over apple mixture. Bake in a 375 degree F oven for 30 to 35 minutes or until apples are tender. Serve warm with a dollop of vanilla or lemon yogurt. .

Frog Eye Salad
INGREDIENTS
1 cup white sugar
2 tablespoons all-purpose flour
2 1/2 teaspoons salt
1 3/4 cups unsweetened pineapple juice
2 eggs, beaten
1 tablespoon lemon juice
3 quarts water
1 tablespoon vegetable oil
1 (16 ounce) package acini di pepe pasta
3 (11 ounce) cans mandarin oranges, drained
2 (20 ounce) cans pineapple tidbits, drained
1 (20 ounce) can crushed pineapple, drained
1 (8 ounce) container frozen whipped topping, thawed
1 cup miniature marshmallows
1 cup shredded coconut
DIRECTIONS
In a sauce pan, combine sugar, flour, 1/2 teaspoon salt, pineapple juice and eggs. Stir and cook over medium heat until thickened. Remove from heat; add lemon juice and cool to room temperature.
Bring water to a boil, add oil, remaining salt and cook pasta until al dente. Rinse under cold water and drain.
In a large bowl, combine the pasta, egg mixture, mandarin oranges, pineapple and whipped topping. Mix well and refrigerate overnight or until chilled. Before serving add marshmallows and coconut. Toss and serve.

Its not really a recipe but my favorite healthy - ish dessert is low fat haagen dazs yogurt (it has 2.5 grams of fat per serving) with fresh fruit like rasberries or blackberries on top.

I take 1 of the skinny cow chocolate ice cream bars...add a little milk and 1/2 of a chopped banana...mic them all in a blender and you get a chocolate banana shake

Frozen fruit frappe
servings: 6
• 2 (16-ounce) cans sliced or halved pears in heavy syrup
• 2 ripe bananas, frozen
• 2 tablespoons fresh lime juice
• 2 tablespoons dark rum
Freeze the unopened cans of pears until solid, at least 18 hours. Submerge the frozen cans in hot water for one minute. Open them and slide out the contents onto a cutting board. Using a very sharp knife, slice into 1-inch-thick slices, then into large chunks. Place the chunks in the bowl of a food processor. Slice the bananas and add to the processor along with the lime juice and rum. Process, pulsing on and off until smooth. Serve immediately or transfer to a storage container and freeze until ready to serve.

1. Preheat oven to 350°. Coat 4 (8-ounce) ramekins with cooking spray. Toss strawberries with 1 tablespoon sugar; place 1 cup strawberries in each ramekin.
2. Combine remaining sugar with other ingredients; stir until crumbly. Sprinkle oat mixture over strawberries. Place ramekins on a baking sheet; bake at 350°for 20 minutes.
Yield: 4 servings (serving size: 1 cup).

• 1 (8-ounce) block 1/3-less-fat cream cheese, softened
• 1 cup powdered sugar
• 1/2 teaspoon vanilla extract
1. Place a large bowl in freezer. Let yogurt stand at room temperature 45 minutes or until softened.
2. Place sour cream and cream cheese in a bowl. Beat with a mixer at medium speed 1 minute or until well blended. Gradually add sugar, beating well. Beat in vanilla.
3. With a rubber spatula or stand mixer, combine softened yogurt and cheese mixture in chilled bowl. Cover; freeze to desired consistency. Serving Size: 1/2 cup. Yield: 12 servings
