Urad (spelling), in Gujarati, it is a type of grain, like Dal, but smaller. Most Indian food stores outside India will carry it ground up in flour form or in Dal form. India.com also carries it on Internet.
Gluten is carb, this flour will have some carb but it is not as much as wheat or rice or other flours
