I think bartender would be the safe way to go. If you use something too "descriptive" or "off", then he will have to explain himself and basically tell them that he is a bartender...and they will probably wonder whay they had to have a conversation about that. He could find out how he is/was classified at the place where he worked,and if they paid him under a code that says "bartender", I would stick with that.
Just make sure to play up all the facets of being a bartender: multitasking, cash handling, customer service...
Also, unless he carries any specific accredidations i.e. sommelier, or a mixologist/mixmaster, I would stick with bartender. It is an industry term that is understood and I doubt he will be asked too many questions, since most people understand what a bartender is.

i prefer bar keep or bar maid, bartending schools refer to bartenders as mixologists, but being a bartender i put bartender on my own resume's, i think thats a fine word to use, even in professional settings, bartenders have a lot of qualities that people look for in an employee, so id stick with bartender.
