When I'm short on time or energy I make "Mac and Trees". I get organic mac and cheese and lightly steam some broccoli and stand the stalks up in the mac and cheese. the kids love it and it's relatively healthy because it's organic and has a veggie... so I don't feel so bad about making such a quick and easy dinner or lunch.

My kids favorite is Shepherd's Pie. It's ground meat (I use turkey), stewed tomatoes, green beans and instant potatoes. It takes about 10 minutes to make the meat. While that's cooking, I do the instant potatoes in the microwave. Then add your stewed tomatoes to the cooked meat; dump that in a casserole dish, top with green beans (canned) and add the instant potatoes. Bake for 15-20 minutes. It's an easy dish that also has veggies. I serve with rolls or cornbread. My older son puts Fritos on the bottom and tops it with cheese. It's good!

My kids love pancakes for dinner. Make them with whole wheat flour and add a bowl of fruit, and it is a quick and healthy meal. (Sometimes we'll even grill up some nitrite-free sausage.)

Off the top of my head :
kd, with crushed tomato's and ground beef in it or
or try a wrap..... turkey or chicken sliced meat with lettuce and ranch sauce (or a bit of mayo either or)
