Obviously everyone has their own way of doing things. I usually just brown the ground beef with onion and some taco seasoning from a packet. I spred my tortilla chips on a baking sheet, sprinkle my beef over all and a combination of cheeses and Bake at 375 until the cheese is melted. When I serve, I have my favorite salsa sauce, sour cream, and sliced green onions and olives in little dishes. Scoop out onto a plate what you want, and top with the other items. YUM.
Another idea especially for summer, is Taco Salad. Make the beef as above, just put it into a mixed green salad with shredded cheese, a can of olives, a cut up tomato a can of drained corn if desired, mix and serve. Place some tortilla chips on each plate and heap the salad over all. Top with dressing. Always a hit at my house!

Nacho Pie
1 pound ground beef
1/2 cup chopped onion
1 can (8 ounces) tomato sauce
2 tablespoons taco seasoning
1 tube (8 ounces) refrigerated crescent rolls
1-1/2 cups crushed nacho tortilla chips, divided
1 cup (8 ounces) sour cream
1 cup (4 ounces) shredded Mexican cheese blend or cheddar cheese
In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in tomato sauce and taco seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes.
Meanwhile, separate crescent dough into eight triangles; place in a greased 9-in. pie plate with points toward the center. Press onto the bottom and up the sides to form a crust; seal perforations.
Sprinkle 1 cup chips over crust. Top with meat mixture. Carefully spread sour cream over meat mixture. Sprinkle with cheese and remaining chips. Bake at 350° for 20-25 minutes or until cheese is melted and crust is golden brown. Let stand for 5 minutes before cutting. Yield: 6-8 servings.

I cook about 1 to 1 1/2 lbs of ground beef and mix it with taco seasoning as directed. Cover bottom of 9 by 13 baking dish with nachos, layer the beef, 1 can of refried beans, and cheese sauce. Sometimes I use ground beef on 1 half and beans on the other, and grated cheddar or monterey jack can replace cheese sauce. Bake in 350 oven until cheese thoroughly melted. After removing from oven, top with shredded lettuce, chopped onions, chopped tomatos, sliced black olives and a can of green chilis. Serve with sour cream, salsa, and guacamole if desired.
Very quick. My kids love it, and you can make it lower fat by using reduced fat chips, beans and cheese, and replacing beef with ground turkey.

I made the best nachos and the kids and husband loved it and it was sooo easy. I browned my chop meat in a pan and then drained it and I bought the chips that are scoops and in the potato chip isle they have cheese in a jar with salsa in it for chips I heated the whole bottle up on the stove and added a little bit of milk to thin a little more then I poured the cheese over the chips and topped it with tomato, black olives and sour cream it was great. I also do little individual plates for dinner and let everyone make there own plate with the toppings they like you do whatever toppings you like.

you must already have the cheese for nachos so make this easy cassarole
1 lb ground beef cooked and drained
2 cups or more cooked rice
salsa to taste--about 1/2 cup
1tbs soy sauce for kick
cheese to taste mix together put more cheese on top and bake at 400 degrees till cheese on top melts about 10 to 15 minutes and its done you can add a can of cream of chicken or cream of mushroom soup to make it more creamy. I just like it with cheese--lots of cheese. My kids and husband both like this real good and love it when I throw in a can of whole kernel corn drained.

SUPER QUICK AND EASY NACHOS!!!
MY HUSBAND LOVES THESE. ALL YOU DO IS BROWN LIKE A POUND OF GROUND BEEF AND DRAIN IT. THEN ADD A CAN OF PLAIN REFRIED BEANS. ADD SOME GARLIC POWDER, SALT, AND PEPPER TO TASTE. THEN ALL YOU DO IS SCOOP A SPOONFUL ONTO A CHIP PUT A BIG PINCH OF CHEESE ON THEM. YOU CAN PUT THEM IN THE MICROWAVE OR THE OVEN FOR A MINUTE IF THE CHEESE NEEDS SOME HELP MELTING. SERVE THEM WITH SOUR CREAM, SALSA, AND/OR GUACOMOLE. FOR JUST THE TWO OF US WE ALWAYS HAVE LEFTOVERS. THEY ARE EASY TO MAKE FOR A GROUP TOO. YOU CAN USE THE LEFTOVER MEAT TO MAKE BURRITOS TOO. TORTILLAS, LETTUCE, TOMATOES, RICE, SOUR CREAM, ECT.
