What is a great tortellini recipe and side dishes.....?

I have never made tortellini but I bought some at the store yesterday and was wondering if anyone had any great recipes. What would you serve it with ?

Make an Al Fredo sauce!
2 oz butter, at room temperature
4 oz freshly grated Parmesan cheese, at room temperature and extra cheese to sprinkle on
1 cup heavy cream,
Salt and freshly ground black pepper
Fresh ground nutmeg
Chopped Italian Leaf parsley as garnish

melt the butter over very low heat.Add the cheese, a little at a time, stirring continuously with a wooden spoon.
Add cream s & p and nutmeg mix together thoroughly using a whisk .Continue stirring until sauce has thickened . Pour over hot spinach fettucine, tortellini or penne, garnsh with parsley

simple with melted butter and sage.Serve them with a simple omelet with asparagus.garden salad.You need to taste the tortellini not the sauce..... but you can do with heavy cream and mushroom sauce or simple as soup cooked in the broth (beef broth that you have prepared with chuck steak carrots onion celery and couple of beef bones ) then you serve the beef on the side with just some oil salt pepper and lemon juice.

I make a homemade chicken noodle soup but use tortellni instead of regular noodles and everyone loves it.
