Around Christmas there were some recipes w/ Rachel Ray on the back of the Big Wheat Thins boxes. I made one - it was a melon and prosciutto salsa for the top of the crackers and it was so good! I've been asked to make it for Easter but can't find the recipe.

Anyone???

1 cup Cantaloupe, diced ¼”
1 cup Honeydew, diced ¼”
½ cup Prosciutto, finely julienned
2 tbsp. fresh lemon juice
2 tbsp. extra virgin olive oil
salt to taste

Directions:

Prepare the salsa by combining the melons, prosciutto, lemon juice and olive oil.
