Mom made a sponge looking dessert that was usually red or green, with or without a cover of ground vanilla wafers. The dessert was semi-sweet and sometimes even had large air holes that looked like a common sponge.

It cut nicely into squares and showed up on a lot of pot luck tables in the 50s. But, I have not seen anything like it for years.

It stood up like jello but much less dense. It was kept in refg. until served, but never melted down like jello. I think cream was involved but I would sure like some now. Any ideas or directions?

Pineapple Lime Congealed Salad
INGREDIENTS:
1 package (6 oz.) lime flavor gelatin
2 cups boiling water
1 can (20 ounces) crushed pineapple in syrup, undrained
1 cup chopped fruit or berries
1 cup sour cream
PREPARATION:
Dissolve the gelatin in boiling water. Add crushed pineapple and chopped fruit or berries and chill until somewhat thickened, about 1 1/2 hours. Stir in sour cream and pour into a 1 1/2-quart ring mold.

You could omit the pineapple and the fresh fruit and you should get the consistency you are looking for.

Trifle perhaps?
2 vanilla sponge cakes
½ to ¾ of a cup of quality Maderia Port Wine or Cream Sherry
1 cup of quality raspberry jam (preferably homemade)
2 cups of fresh English Custard
1½ cups of whipped cream
Dark eating chocolate for garnish
I think the best trifle is one made very simply, with quality ingredients and not too many layers. First find a large serving bowl and place 4cm (2 inch) cube sponge pieces dipped in the port between thin drizzles of fresh homemade raspberry jam. Spread a little more raspberry jam over the layer of sponge and then spread a thicker layer of freshly cooled English custard. Then repeat with a second layer. You should end up with two of each layer ... sponge, jam, custard, sponge, jam, custard. Finish with a layer of whipped cream. Garnish with grated dark chocolate, chocolate chips or a crumbled flake bar.

Refrigerate for several hours or overnight before serving.

(Serves 8 to 10)

You could also use ladyfingers instead of sponge cake.
