Baking chocolate is measured in ounces. Squares are usually 1-2 ounces. The package will tell you how many ounces are in the package, and you count how many squares are in the package. If necessary, you can substitute 3 tablespoons of baking cocoa plus 1 tablespoon of shortening or oil for each ounce of baking chocolate needed.

Baking chocolate usually comes in 1 ounce squares. That would be 2 tablespoons or 1/8 of a cup.

The package should tell you how much each square weighs.

If it is unsweetened baking chocolate, the traditional substitute was 3 parts cocoa and 1 part shortening or oil.

If it calls for semi-sweet or sweetened chocolate, you will have to also add sugar. semisweet chocolate can be replaced by 1 part sugar, 1 part cocoa, 1 part shortening.

Check out the FoodTv website and I am sure you will probably find a list or chart there that tells you the exact measurements for the chocolate that you need.
