When I get a request for strawberry cake, I make a regular white cake mix and bake it in a 9 X 13 pan. I clean a large clamshell of strawberries and add some sugar. I refrigerate those overnight, so there's a nice syrup. Just before serving, I whip some heavy cream sweetened with a bit of sugar and some vanilla extract. I top the cake with the strawberries then cover the whole thing with the real whipped cream. People go crazy over this cake. Easy and delicious! Enjoy!

Strawberry Charlotte
What is Strawberry charlotte?
A cold dessert with strawberry cream and ladyfingers. It is rumoured that this recipe was created by a french chef in the United States but there is another story telling that it was made by another famous french chef in Paris!
Ingredients
2 lb fresh strawberries
2/3 cup sugar
8 egg yolks
2 1/2 cup whipping cream
Ladyfingers
Buy ingredients at the grocery and gourmet store
Strawberry Charlotte recipe (serve 6)
Step 1: Keep aside 3 oz of strawberries to decorate the cake at the end of the recipe. Make a strawberrry purée using a blender. Chill the purée.
Step 2: Mix sugar and egg yolks and beat them until pale yellow. Chill the mixture.
Step 3: Beat the cream.
Step 4: Line the sides of a cylindrical mold with ladyfingers
Step 5: Fold the chilled strawberry purée into the chilled mixture, then into the cream. Put in the mold. Add lady fingers over the cream.
Step 6: Cover with wraxed paper and refrigerate for 8 hours.
Step 7: Reverse dessert into a serving dish. Decorate with fresh strawberries.
Wine suggestion: Champagne, dessert wine such as Sauternes Jurançon or Muscat. You can also try a red wine from Bordeaux.

Strawberry Cake
Ingredients:
1 (3 ounce) package strawberry flavored gelatin
1/2 cup cold water
1 (18.25 ounce) package white cake mix
4 eggs
1 cup vegetable oil
3 tablespoons all-purpose flour
1 (10 ounce) package frozen strawberries, thawed
6 tablespoons butter
2 cups confectioners' sugar
Directions:
Preheat the oven to 325 degrees F (165 degrees C).
Grease and flour three 9 inch round cake pans.
In a large bowl, dissolve the gelatin in cold water; stir in the cake mix, eggs, vegetable oil, flour and 1/2 of the strawberries. Beat for 5 minutes on the medium speed of an electric mixer. Divide the batter evenly between the prepared cake pans.
Bake for 30 to 35 minutes in the preheated oven, or until the layers spring back when lightly pressed in the center. Cool cakes in the pans on wire racks.
To Make Frosting: Cream the butter, sugar and the remaining half of the strawberries in a medium bowl until light and fluffy, adding additional confectioners' sugar if needed for a spreadable consistency. Spread the frosting between layers and over the top and sides of cake.

Personally, I would make the cake & then use strawberries as the filling (maybe a pudding filling with strawberries or with a yummy buttercream & strawberries.) I did find a recipe online you might like:

STRAWBERRY CAKE WITH CREAM CHEESE
FROSTING
Cake:
1 pkg plain white cake mix
1 pkg strawberry gelatin
1 cup mashed strawberries with juice
1 cup vegetable oil
1/2 cup whole milk
4 large eggs
Frosting:
1 pkg (8oz) cream cheese
1 stick of butter
3 1/2 cups confectioner's sugar
3/4 cup mashed strawberries (drained)
Preheat oven to 350°F degrees.
Lightly grease three 9 inch round pans. Set pans aside.
Place cake mix, strawberry gelatin, mashed strawberries, oil, milk, and eggs in large mixing bowl and beat on low speed for 1 minute. Strawberries should be well-blended.
Divide batter among pans and place in oven.
Bake cakes until lightly brown (about 28-30 minutes). Remove from oven and allow to cool for 40 minutes.
Prepare frosting:
Combine cream cheese, and butter and mix on low speed for a minute. Add sugar and strawberries. Blend frosting on low until sugar is incorporated.
To assemble: place one cake layer on plate and spread top with frosting, add another cake layer and frost the top, add last cake layer and frost the top. Use remaining frosting for the sides of the cake.
Optional: Place fresh strawberries on top of frosting for decoration

Here is an easy and delicious cake you can use:
Make your white or vanilla cake according to pkg directions.
Right after you take it out poke holes all over it with a butter knife.
Mix up on package of strawberry (or whatever) flavor you want to use of gelatine and pour it over the cake. Put it into the refrigerator overnight. Cover the entire cake in cool whip and then top with matching fruit.....strawberries if you used that type of gelatine or peach slices if you used peach gelatine etc. it is wonderful and my family loves it plus with it being spring now the light fruit flavor seem great. we are having this at our easter dinner I will probably make a peach and a pineapple or orange!! good luck!

Strawberry Dream Cake
INGREDIENTS
1 (18.25 ounce) package white cake mix

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 3 (9 inch) round pans.
In a large bowl, stir together cake mix and gelatin mix. Make a well in the center and pour in 1 cup mashed strawberries, oil, milk and eggs. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Fold in the coconut and pecans. Divide the batter among the prepared pans.
Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
To make the Strawberry Cream Cheese Frosting: Mash the 3/4 cup strawberries to make 1/2 cup, then drain well; set aside. In a medium bowl, beat cream cheese and butter until smooth. Blend in the confectioners' sugar and drained strawberries. Beat on medium speed until the frosting lightens and is well combined. Fold in the coconut and pecans. Frost cake between layers, on top and sides. Chill uncovered 30 minutes or until frosting sets, then cover and chill 4 to 6 hours before serving.

there is a website I use all of the time it is called :www.kraftfoods.com. I have 5 kids and like easy creative ideas that the kids will enjoy here is a REALLY easy one for a strawberry (or other flavored) poke cake:
choose the flavor of cake as the base then choose the jello
white cake Strawberry
yellow cake Berry Blue
spice cake Orange
chocolate cake Cherry
We then make the cake as per directions on the box. when the cake is done we use a fork to poke the cake all over the top. make jello as per directions on the box BUT only add the boiling water to the jello and stir well, then pour over cake. Put in fridge like 3 hrs frost with whipped cream and serve!
We REALLY like this one as we use the cool whip to frost instead of frosting and it is fabulous and so very easy
this is the actual recipe:
PLACE 2 baked 9-inch round cake layers, top side up, each in clean 9-inch round cake pan. Pierce cakes with large fork at 1/2-inch intervals.
STIR boiling water into 2 pkg. (4-serving size each) Jell-O Brand Gelatin in medium bowl at least 2 min. until completely dissolved. Carefully pour gelatin evenly over cake layers. Refrigerate 3 hours.
DIP one of the cake pans in warm water 10 sec.; unmold onto serving plate. Spread with about 1 cup of the whipped topping. Unmold second cake layer; carefully place on first cake layer. Frost top and side of cake with remaining whipped topping. Refrigerate at least 1 hour or until ready to serve. Decorate as desired. Store leftover cake in refrigerator.

Break up an angel food cake and mix in with strawberry jello that has been dissolved in water plus a container of frozen strawberries and mix in a container of cool whip..chill. MMM oh put in a cake pan then chill :)
