I have a pound of chop meat in the fridge and don't know what to cook. Any suggestions?

My family loves this recipe. It's kind of a "poor man's stroganoff"

Brown the chopped meat with some finely chopped onion. Drain.

In a skillet stir together: meat mixture, chopped mushrooms, 1 jar brown (meat) gravy, 1/2 cup sour cream (I use light or fat free -- any kind will work.) Add salt pepper & garlic powder to taste. Heat through & serve over noodles or rice.

Very simple, quick & filling.

Sometimes I also add veggies to this mix: green beans, par-cooked cauliflower or broccoli. You can really make a one-dish meal from this.

This is a very traditional Jamaican dish I grew up on. It's called minced beef and fried dumplings. You probably have all of this stuff in your fridge.

Minced beef:

Sautee a small onion, 1/4 pepper and a clove of garlic. Add the ground beef and brown. Then add 1/4 c. ketchup with about 1/4 cup of water. Let it simmer with adding some spices. If you like it spicey add chili flakes or hot sauce, thyme is always pretty good.

Fried Dumplings:

1 3/4 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
3/4 cup milk

This is just a basic recipe. You may have to add more flour or milk depending on the humidity, altitude, flour, etc. You need to work the dough until it's "doughy". This is not a recipe that you have to worry about overworking the dough. Once you are done make the dumplings about the size of hockey pucks. Fold them a little to make a belly button in the middle. Fry in about an inch of vegetable oil. Don't let the oil get too hot. They take 8 - 10 inches per side.

These are really great, but if you're not feeling brave you can serve this over rice. But, the dumplings are better!

We're having Hamburger Surprise. Which means when it's time to cook, I'll brown the meat and throw some stuff together out of the pantry to create something. Usually works out edible, but have had the occasional disaster.

Untidy Samuels

Probably more widely known as Sloppy Joes, these can be made with ground beef or ground turkey. This homemade version is light years ahead of anything you can buy in an envelope or can, and really just as easy. I like to serve these with paper-thin slices of red onion.

Ingredients
1 teaspoon vegetable oil
1 lb. ground beef or ground turkey
1 medium yellow onion, peeled and chopped fine
1/2 cup best-quality ketchup
1/2 cup best-quality chili sauce
2 tablespoons Worcestershire sauce
1 teaspoon coarse salt
freshly cracked black pepper
1/3 cup water
6 sesame seed topped hamburger buns, warmed

Method
Brush a skillet with oil and warm over moderate heat, 30 seconds. Add beef [or turkey] and onion and sauté 10 minutes, stirring frequently. Add all remaining ingredients [except buns] and simmer, uncovered, 10 minutes. Spoon mixture between split buns and serve immediately.

How about a ground beef stroganoff?

1 lb. ground beef
1/2 onion, diced
1/2 tsp garlic powder
3 T butter
1 cup sliced mushrooms
1 can cream fo mushroom soup
1/2 cup sour cream
1/2 cup parmesan cheese
1/4 tsp fresh ground pepper
Egg noodles

Saute ground beef with onion until cooked thru. Add mushrooms and butter. Saute until mushrooms begin to wilt. Add garlic powder and pepper. In mixing bowl, blend sour cream, soup and parmesan cheese. Drain excess oil from ground beef mixture and add soup mixture. Cook until heated thru. Pour over cooked egg noodles and garnish with more cheese. Add salt and pepper to taste.

brown meat with onion chopped add a can of stewed tomatos and a can of tomato sauce and cook pasta and serve it all together.
