2 eggs
2 (13 oz.) pkgs. apple cinnamon or blueberry muffin mix
2/3 c. all purpose flour
Cooking oil or shortening for deep fat frying
Powdered sugar, granulated sugar or cinnamon sugar (see below)

In medium mixing bowl beat eggs; set aside. Drain both cans of apples or blueberries from muffin mixes; add to beaten eggs. Stir in flour and dry muffin mixes. On well floured pastry sheet roll out dough to 1/2" thickness. Cut out donuts with a floured 2 1/2" diameter donut cutter, pressing straight down.
Meanwhile, in a large saucepan or deep fat fryer heat cooking oil to 375 degrees. Fry the donuts and holes, a few at a time, for 1 to 1 1/2 minutes or until golden brown, turning several times. Drain on paper toweling. If desired, sprinkle powdered sugar over tops of rolls in granulated sugar or cinnamon sugar. Makes 16 donuts.


CINNAMON SUGAR:

1/2 c. packed brown sugar
1 1/4 tsp. ground cinnamon

Combine.

Pineapple Drop Doughnuts

3 c. flour
3/4 c. sugar
2 T. baking powder
3/4 tsp. salt
3 eggs
1 c. milk
1 can (20 oz.) crushed pineapple, drained
Oil for deep-fat frying
Confectioners’ sugar

In a large bowl, combine the first 4 ingredients. In another bowl, beat eggs and milk. Stir in pineapple. Stir into dry ingredients just until blended. In an electric skillet or deep-fat fryer, heat oil to 375º. Drop batter by heaping teaspoonfuls, a few at a time, in Hot oil. Fry until golden brown, about 1-1/2 minutes on each side. Drain on paper towels. Dust with confectioners’ sugar.

NOTE: Doughnuts may be frozen before sugaring in an airtight container for up to a month. To reheat, place on a microwave-safe plate and microwave on high for 5-10 seconds or until warm. Dust with confectioners’ sugar.

Yield: about 10 dozen

The easiest way to make donuts in the deep fryer is to buy fridge biscuits. Keep the circles if you want them filled or poke a hole in them for circle donuts. The middles can be muchkins. Just remember, don't make too much they are not very good more than a day old.

DONUTS

Canned biscuits
Oil for deep frying
Powdered sugar glaze

Heat cooking oil, enough to cover. Shape or cut the biscuits into donut shapes. Drop them into hot oil and cook until golden brown.

GLAZE:

Dip donuts in a glaze made of:

1 c. powdered sugar
1/3 c. boiling water



ZEPPOLES (DONUTS WITHOUT HOLES)

5 c. flour
2 pkg. yeast
2 c. warm water
2 tbsp. sugar
1 tsp. salt
4 tbsp. oil
1 egg
1/2 box raisins
Vegetable oil for frying (about 2 to 3 inch frying pan or deep fryer)
Small paper bag with approximately 2 c. sugar

Dissolve yeast in water with 2 tablespoons sugar. Add part of the flour with the salt and mix well. Beat in egg and add oil. Add remaining flour and raisins. Let rise for 1 hour. Drop into hot oil with a large spoon, or use your fingers. Donuts will be about 2 to 3 inches in diameter. Fry on both sides, drain on paper towels and then dip into sugar filled bag to coat.

I have a great recipe for Arabic donuts, though they are not like American ones.
2 cups pastry flour
1 cup yogurt
1/4 tsp baking soda.
sugar syrup (1 cup water, 1 cup sugar, juice of 1/4 lemon and two cinnamon sticks ((optional)) boiled for ten minutes, remove from heat)
Mix, drop in 350 degree oil by the teaspoonful.
If you don't use cinnamon stick in the syrup, coat with crushed walnuts and cinnamon powder after syrup.

Buy some cheap tube biscuits (don't get those flaky layer kind that Pilbury has though), take a bottle cap and use to cut a hole out of the center. Drop them slowly into the hot oil, and they finish when they float. (Put 'em in too quick and the temp will drop and they will get greasy.)

Shake powdered sugar over them, or spread with some icing (mm... Maple Glazed...) and you've got awesome hot fresh donuts.

Crispy Creamy Doughnuts

INGREDIENTS
2 (.25 ounce) envelopes active dry yeast
1/4 cup warm water (105 to 115 degrees)
1 1/2 cups lukewarm milk
1/2 cup white sugar
1 teaspoon salt
2 eggs
1/3 cup shortening
5 cups all-purpose flour
1 quart vegetable oil for frying

1/3 cup butter
2 cups confectioners' sugar
1 1/2 teaspoons vanilla
4 tablespoons hot water or as needed
DIRECTIONS
Sprinkle the yeast over the warm water, and let stand for 5 minutes, or until foamy.
In a large bowl, mix together the yeast mixture, milk, sugar, salt, eggs, shortening, and 2 cups of the flour. Mix for a few minutes at low speed, or stirring with a wooden spoon. Beat in remaining flour 1/2 cup at a time, until the dough no longer sticks to the bowl. Knead for about 5 minutes, or until smooth and elastic. Place the dough into a greased bowl, and cover. Set in a warm place to rise until double. Dough is ready if you touch it, and the indention remains.
Turn the dough out onto a floured surface, and gently roll out to 1/2 inch thickness. Cut with a floured doughnut cutter. Let doughnuts sit out to rise again until double. Cover loosely with a cloth.
Melt butter in a saucepan over medium heat. Stir in confectioners' sugar and vanilla until smooth. Remove from heat, and stir in hot water one tablespoon at a time until the icing is somewhat thin, but not watery. Set aside.
Heat oil in a deep-fryer or large heavy skillet to 350 degrees F (175 degrees C). Slide doughnuts into the hot oil using a wide spatula. Turn doughnuts over as they rise to the surface. Fry doughnuts on each side until golden brown. Remove from hot oil, to drain on a wire rack. Dip doughnuts into the glaze while still hot, and set onto wire racks to drain off excess. Keep a cookie sheet or tray under racks for easier clean up.

My daughter has this simple recipe that my kids love... take pkg biscuits and separate them... make a hole in them and deep fry them until golden brown... take them out ... drain on paper towel for seconds.... sprinkle cinnamon sugar on them or dip the tops in melted chocolate. She is 15 and has been doing this for 2 years. Very simple and they are great.
