Spicy Chicken Spaghetti
INGREDIENTS
1 (16 ounce) package uncooked spaghetti
1 cup Worcestershire sauce
1 cup ketchup
1 cup tomato sauce
1 cup chopped green bell pepper
1 cup chopped onion
1/2 cup brown sugar
1 teaspoon chili powder
1 whole cooked chicken, deboned and chopped
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Place spaghetti in the pot, cook 8 to 10 minutes, until al dente, and drain.
In a separate pot, mix the Worcestershire sauce, ketchup, tomato sauce, green bell pepper, onion, brown sugar, and chili powder. Bring to a boil. Mix in the chicken, reduce heat to low, and simmer 10 minutes, or until chicken is heated through. Mix in the cooked spaghetti, and serve warm.

This is possibly the easiest and quickest recipe ever. Plus, if you use low fat or fat free ingredients, it's healthy too.
Chicken Bake
1 pound boneless, skinless chicken
1 cup Campbell's Healthy Request Cream of Mushroom Soup
1/2 cup fat-free sour cream
1/2 tsp dried rosemary
1/2 tsp kosher salt
1/4 tsp black pepper
1/2 cup fat-free evaporated milk
2 tsp olive oil
Boil chicken in chicken stock until cooked through. Drain.
In a bowl, combine remaining ingredients.
Brown chicken thighs in a pan covered with spray & 2t EVOO.
Add sauce & simmer for about 10 minutes (or until heated through.)
This is a big hit with my family (and it's on the menu for Thursday.)

Oven Fried Chicken
Make three "dipping stations"
Season the chicken with all purpose seasoning.
Cover in first bowl which you have filled with flour & a little extra seasonings
Dip in second bowl which contains two eggs beaten.
Cover in third bowl which has bread crumbs in it!... Italian or whatever style you like.
Simply place it on a cookie sheet in the oven at 350degrees truning after 15 minutes for a total cooking time of 24-30 minutes.
This is easy and delicious! Serve it with mashed potatos and corn for a Southern Style. Make it into chicken parm by topping with hot marinara sauce, sprinkling cheese on top and serving with pasta. You could also make it a part of a healthy meal and serve it with rice pilaf and veggies. It's perfect any way you chose!

A simple dish that I enjoy is to take some onion and sautee that in some butter, or a healthier butter alternative if you prefer. Then add some chicken and a good bit of dijon mustard. When the chicken gets close to done, I throw in some fresh garlic if i have it and some white wine right at the very end. It's easy and very tasty, without too much of a mustard flavor. Enjoy!

Chicken Marengo
Ingredients
2 tablespoons olive oil
1 3 pound broiler – fryer, cut up
1/2 pound button mushrooms, wiped clean
2 cloves garlic, peeled and crushed
1 large ripe tomato, peeled, cored, seeded and chopped [or 2/3 cup coarsely chopped drained canned tomatoes]
1/2 cup dry white wine
2 tablespoons tomato paste
coarse salt
freshly ground black pepper
freshly minced parsley
Method
Heat oil in a large, flameproof casserole over moderate heat. Brown chicken well on all sides; remove and set aside. Sauté mushrooms in casserole 3 – 5 minutes until golden; add garlic and stir – fry 1 minute. Stir in all remaining ingredients except parsley and return chicken to casserole. Cover and simmer about 45 minutes until tender. Sprinkle with parsley and serve.

Chicken & Stuffing Bake
Ingredients:
1 1/4 cups boiling water
4 tbsp. butter OR margarine, melted
4 cups Pepperidge Farm® Cubed Herb Seasoned Stuffing
6 boneless chicken breast halves
Paprika
1 can (10 3/4 oz.) Campbell's® Condensed Cream of Mushroom Soup OR 98% Fat Free Cream of Mushroom Soup
1/3 cup milk
1 tbsp. chopped fresh parsley OR 1 tsp. dried parsley flakes
Directions:
MIX water and butter. Add stuffing. Mix lightly.
SPOON stuffing along center of 3-qt. shallow baking dish. Arrange chicken on each side of stuffing and sprinkle with paprika.
MIX soup, milk and parsley. Pour over chicken. Cover.
BAKE at 400°F. for 30 min. or until done.

This is hopelessly easy.
Take a whole chicken. Shove an onion and three bay leaves in the cavity. Bake at 350 until brown and yummy.
You can also cover a chicken in a spicy season salt and bake. I use Tony Chachere's.

CHICKEN WITH WHITE SAUCE
1 2-1/2 to 3-pound chicken, cut into serving pieces
5 tablespoons butter
1 bunch scallions, chopped, including 2 inches of the green tops
1/2 pound mushrooms, quartered
2 cups chicken broth
1/2 cup dry sherry
Salt and freshly ground pepper to taste
2 tablespoons flour
1 cup light cream
1/4 cup finely chopped fresh tarragon or 1 teaspoon dried tarragon
1/3 cup chopped walnuts
Dry the chicken thoroughly with paper towels. In a large, heavy skillet heat 3 tablespoons of the butter over moderate heat. Add the chicken, skin side down, and saute, turning to brown evenly on all sides. Remove to a plate and set aside.
Add the scallions and mushrooms to the skillet and cook until the vegetables are lightly browned, stirring frequently. Return the chicken to the skillet. Add the broth, sherry, and salt and pepper. Cover and simmer until tender.
Transfer the chicken and vegetables to a serving platter and keep warm. Reserve the cooking liquid in the skillet.
In a small saucepan melt the remaining 2 tablespoons butter over low heat. Add the flour and cook 3 or 4 minutes, stirring constantly. Gradually add the cream and the reserved cooking liquid from the chicken, stirring constantly with a wire whisk. Simmer until the sauce is smooth, thickened, and hot. Stir in the tarragon and walnuts, taste for seasoning, and pour over the chicken. Serve with buttered noodles and buttered green peas or asparagus tips.

BAKED PARMESAN CHICKEN
1/2 cup all purpose flour
1/2 cup parmesan cheese (grated)
2 tsp dried basil leaves
1 tsp dried oregano leaves
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic
1/4 cup butter
1/3 cup milk
6 split chicken breasts
Preheat oven to 400 degrees.
In 13x9in baking pan melt butter in oven. Meanwhile in bowl mix all ingredients exept milk and chicken.
Dip chicken breasts in milk and then coat in flour mixture. Dip chicken in butter then place skin side up in pan. Bake for 45 to 50 minutes or until chicken is fork tender and golden brown.
(Parmesan cheese forms a crunchy coating on this oven-baked chicken.)

Chicken and Rice
4 chicken breasts, bone in with skin
2 cups rice
2 cans chicken broth, low sodium if you can get it
1 large onion, diced medium (<1/4 inch cubes)
2 tablespoons butter plus 2 more tablespoons butter
Preheat oven to 350F.
In a skillet, melt first butter on medium heat. Put chicken in skin side down and brown for 5 to 7 minutes.
In a baking pan (9x9 glass is best, but metal will work), spread out the rice evenly across the bottom of the pan. Place browned chicken skin side up on top of the rice.
In the same skillet, melt butter on medium heat. Put diced onion in saute for 5 to 7 minutes. Evenly distribute on top of chicken in pan.
Add the chicken broth to the pan plus 1 cup of water. Place in preheated 350F oven for 45 minutes. If rice starts to look dry, add a half cup of water and cover pan with aluminum foil until time is up. Serve and allow individuals to salt or pepper according to taste.
