African Beef Curry

3 lbs beef stew meat
1 onion, chopped
1 can beef broth
1 ¼ lbs roma tomatoes, chopped
1 jalapeno, minced
White rice
3 garlic cloves, minced
¼ cup curry powder
Pinch of dry mustard
Garlic salt, pepper, cayenne pepper, white pepper


1) In a large pan, combine beef, onion and 1 cup water. Cover and brig to a boil, then simmer for 30 minutes.
2) Make rice according to directions.
3) Uncover meat pan and turn heat to high. Stir until liquid evaporates. Add garlic, curry powder, mustard, garlic salt and peppers. Stir for 1 minute. Add beef broth, tomatoes and jalapeno. Return to a boil, reduce heat and simmer for 1 hour.
4) Serve over rice.



Swiss Bliss

2 lbs beef chuck pot roast
1 envelope onion soup mix
3 cups fresh mushrooms, sliced
1 bell pepper, sliced
1 (16 oz) can diced tomatoes (save juice)
1 tbsp cornstarch
1 tbsp A1 sauce
Worcestershire sauce
Salt & pepper


1) Heat oven to 375. Cut huge piece of foil and fold in half. Place on baking sheet.
2) Cut meat into 4 pieces, put on foil. Sprinkle soup mix, mushrooms, bell pepper & tomatoes on top of meat. Season w/salt & pepper.
3) In medium bowl, stir juice from tomatoes, cornstarch and A1 sauce. Pour sauce over meat and vegetables.
4) Bring edges of foil up and tighten securely.
5) Bake for 2 hours.


* Serves 4
* Good served over mashed potatoes
