Then equipment and staff
Then a license from the local council if you want to serve hot food and drink after a certain time (dependant on local by-laws)
Then stock
Then training & an excellent customer focus.
Then stamina, strength, courage and conviction

market research, product knowledge, sufficent funding (without this don't bother) a friendly small business advisor. premises, equipment, a knowledge of health and safety and hygiene legislation,the stamina of an ox, the courage of a lion and the luck of the devil.
