Twice Baked Potatoes with Mushrooms
Potatoes are baked, stuffed, then baked again to brown.
INGREDIENTS:
4 large baking potatoes
1/4 cup milk
salt and pepper
2 tablespoons butter
4 ounces chopped mushrooms
1 tablespoon butter for brushing
chopped chives for topping
PREPARATION:
Scrub potatoes; arrange in a pie pan or on baking sheet or on oven rack. ***** with a fork in a few places and bake at 450° for 45 to 50 minutes, or until tender. Cut a thin slice from the top of each potato; scoop out potato into a bowl, leaving shell intact.
Add milk and beat until fluffy. season with salt and pepper. In a skillet, melt butter over medium heat. Sauté mushrooms until tender; stir mushrooms and butter into the potatoes. Pile potato mixture into the shells; brush potatoes with additional butter and sprinkle with chives. Brown twice baked potatoes lightly in the oven at 450°. Twice baked potato recipe serves 4.

Here's how to cook them & serve w/ the usual condiments. For something different, I like mine w/ salsa & a little cheese.
1 large russet potato (If it looks like Mr. Potato Head(r), you've got the right one.)
Canola oil to coat
Kosher salt
Heat oven to 350 degrees and position racks in top and bottom thirds. Wash potato (or potatoes) thoroughly with a stiff brush and cold running water. Dry, then using a standard fork poke 8 to 12 deep holes all over the spud so that moisture can escape during cooking. Place in a bowl and coat lightly with oil. Sprinkle with kosher salt and place potato directly on rack in middle of oven. Place a baking sheet on the lower rack to catch any drippings.
Bake 1 hour or until skin feels crisp but flesh beneath feels soft. Serve by creating a dotted line from end to end with your fork, then crack the spud open by squeezing the ends towards one another. It will pop right open. But watch out, there will be some steam.
NOTE: If you're cooking more than 4 potatoes, you'll need to extend the cooking time by up to 15 minutes.

Place baked potato in oven at 350 degrees and cook for about 40-60 minutes. It's done when you can stick a fork in and it slides all the way through.
Top with sour cream (chop some chives into it for better flavour), shredded cheddar cheese, add broccoli or mushrooms. Some people like bacon bits.

Tiffany a potato does not " bake" in a microwave.... it will be steamed. If you want a baked potato, which has a far better taste than a microwaved potato, bake it in a 350 degree oven for one hour. Then top with butter, sour cream, bacon bits, and shredded cheddar cheese.

A baked potato is not something you can make quickly as it usually takes an hour to bake it. But it is relatively simple.
From the sound of things, you want to give it a bit of a variety. Here is something you can do to make it a bit different.
Pierce and bake the potato in the oven as another poster mentioned. (You pierce it with a paring knife or fork so built up steam can easily escape) Bake about 350F for an hour or less at a higher temperature like 400F for 30-40min. Towards the end of that time, you can take the potato out of the oven, split it in two lengthwise and scoop out the white potato "meat" leaving just the skin and a slight potato layer.
Brush the inside of the potato skin with olive oil and crushed garlic, then put that back in the oven on a higher temperature even perhaps on broil for a short period (just so it browns but not too long or it will burn).
Meanwhile, take the potato "meat" that you scopped out and mash it with butter and your choice of dressings such as cheddar or monterey jack cheese, bacon bits (real not simulated), sour cream, green onions, roasted garlic puree, or even some cayenne pepper.
Finally, take the browned potato skins back out, fill them back up with the mashed potato mix, and either serve as is or put them back in the oven for one last time to get a nice golden crust on the top of mashed potato mix.
It will take some getting used to timing it and depends on your oven, but you can get to the point where you take out the potatos, scoop em out, brown the skins while mashing and mixing, and then have them ready with the rest of the meal.

3 tablespoons shredded Cheddar cheese
salt and pepper to taste
3 teaspoons sour cream
DIRECTIONS
Scrub the potato, and ***** several time with the tines of a fork. Place on a plate.
Cook on full power in the microwave for 5 minutes. Turn over, and continue to cook for 5 more minutes. When the potato is soft, remove from the microwave, and cut in half lengthwise. Season with salt and pepper, and mash up the inside a little using a fork. Top the open sides with butter and 2 tablespoons of cheese. Return to the microwave, and cook for about 1 minute to melt the cheese.
Top with remaining cheese and sour cream, and serve.

Scrub well, make a 2mm deep incision round the potato
Place on a bed of salted tray in a hot oven 425-450 for approx 1hr. Turn the potatoes over after 30min

We do them in microwave just split potato down the middle & add one of the following:
Cheese with Broccoli -cut up
Cheese & Onions-diced up
Salas Sauce
All the above are easy & cheap to make..
