the tax forms has a mandatory field for spouse's social security number, but she is in China now, and doesn’t have one.. I support her and my daughter financially, but how do I file?

My wife does not have a social either. I can not file as married. I have to file as Head Of Household. You can call the IRS. They will tell you the same thing. Now if your child has a social then you can file her as your dependant as long as you have taken care of her for the 12 months of 2006. If your child was born in 2006, you can still put down 12 months for dependancy.

You will need to file Form W-7 in order for your wife to get an ITIN - "Individual Taxpayer Identification Number." An ITIN is a tax processing number only available for certain nonresident and resident aliens, their spouses, and dependents who cannot get a Social Security Number (SSN).

You can only file as head of household, as you will need your wife's SSN in order to file as married.

I don't believe you can claim them as dependants if they did not live with you in the US last year, therefore I don't see how you can file married-joint.
Best bet is to call the IRS.

I don't think you can. She has to have a valid social security. When in doubt, best call the IRS. They aren't all that mean, and can be very helpful.
