I have a beef brisket. My husband had some at a shindig at one of the plumbing supply houses. He doesn't liked boiled corned beef and cabbage, but this he liked. He thinks it was baked he said it was tender, but he doesnt know what spices or how to cook. Does anyone have any simple recipes with ingredients you normally have in the house. I dont have any beer. Any Ideas?.

INGREDIENTS
1 (3 pound) beef brisket, trimmed of fat
1 medium onion, thinly sliced
salt and pepper to taste
1 (12 fluid ounce) can beer
1 (12 ounce) bottle tomato-based chili sauce
3/4 cup packed brown sugar
DIRECTIONS
Preheat the oven to 325 degrees F (165 degrees C).
Season the brisket on all sides with salt and pepper, and place in a glass baking dish. Cover with a layer of sliced onions. In a medium bowl, mix together the beer, chili sauce, and brown sugar. Pour over the roast. Cover the dish tightly with aluminum foil.
Bake for 3 hours in the preheated oven. Remove the aluminum foil, and bake for an additional 30 minutes. Let the brisket rest and cool slightly before slicing and returning to the dish. Reheat in the oven with the sauce spooned over the sliced meat.

My uncle makes great briskets. He slow cooks the meat in the oven at 250 degrees for 6 - 8 hours. He drizzles a little olive oil in the bottom of the pan so it won't stick. Baste the meat once an hour or so to keep it from drying out (add a small amount of water to the pan if needed). The only seasoning necessary is salt and pepper to taste (although many drown brisket in BBQ sauce, which I think is foul).

Always check the meat with a meat thermometer to make sure it gets to the proper internal temp so you don't get sick.

I like to braise brisket. Season the meat with salt and pepper, then marinate overnight in a puree of tomatoes, garlic, cumin, cayenne, bay leaf, and lime juice.
Sear the brisket in a pan with oil on both sides, remove the brisket add 1 diced onion and green pepper and saute, deglaze the pan with red wine, remove from heat, add the brisket and the marinade to the pan, bring to a simmer and cover tightly, then place in a 275 degree oven for about 3 hours, check to make sure it is done, should be fork tender. The liquid can be used as a sauce over it.

My personal favorite method is smoking. Smoke the meat for about 12 hours using either Mesquite, Hickory, or Pecan wood.

It is a good idea to cover the surface with a dry rub first.
