Why is a watermelon sweet at its center than anywhere else? Will knocking it help to know if it's truly ripe?

smell it on the bottom. If it has a strong scent, it's ripe, too strong, it's too ripe, no smell, put it back!

The sweet part of the melon is called the heart. It is the best part. The say that thumping a melon can tell you if it is too ripe. I usually tell by smelling the stem. It is best to wait till watermelon season to get the best tasting melon.
