Gumbo is a kind of spicy soup type stew, served with a little rice. Its name comes from Africans imported for the awful slavery trade. Some reckon it should have okra, but this is not always used.
Basic ingredients can include: fish heads, tails and trimmings, onions, carrots, celery, leek, prawn shells and heads : all for the fish stock. Andouille (spicy sausage), smoked pork or bacon, garlic and a list of other herbs and spices. Fresh tomatoes pureed, large prawns, oysters, crab meat and crayfish (freshwater) and boudin - a sausage made from minced crawfish.

The word gumbo comes from a old creole word "quigombo" which means Okra.
In order for the soup to "set" orka must be used.
