There is no generalized closing time. Alcohol can be served 24 hours, but some cities have adopted local ordinances that limit the places and hours in which alcohol can be served. In the case of Old San Juan, it's 2AM, with some exceptions (you can drink INSIDE a bar that's considered within a "tourist" area 24 hrs). This link has the municipal ordinance in Spanish:

It all depends on what you are looking to drink. I'm a local from the city of Fajardo & I don't go into many of the San Juan bars & discotheques, but many of the bars in the island are open up to 4:00, especially if its a fight night, when the bars stay open late. Like I said, I'm from Fajardo, a city in east PR & basically go to a few bars, only when I'm with my uncle (the small local ones). But when I go out with my friends, I go to a bar to watch the boxing events. If you're looking to get your fix on a nice cold "brewski" then you can go to any gas station that is open 24 hours. This does sound a little undecent, but I used to do it when I was working for Sizzler. Anyways, like I said in the beginning, it all depends....

It depends where you are at...in a Hotel Bar? in a Corner Bar in Old San Juan?
ussually around 2am is the last drink.

There are places everywhere you can drink until 3am. They never card you.
