i recently started learning how to cook, and i absolutely LOVE fish like swordfish and salmon. I had no problem cooking the salmon on the stove, but the swordfish came out awful! i don't have easy access to a grill, so i cooked it stove-top in some olive oil and a little salt and pepper. the finished result was a tasteless, chewy, probably overcooked mess. any suggestions for better fish?

Bry broiling. Place the steak in a nonstick pan, baste with butter(real) and salt and pepper (or spice) to taste.

Broil in the oven about 12-15 minutes and ooooh baby!

PAN FRIED SWORDFISH STEAKS

Ingredients:
8 tbsp Lime Flavored Olive Oil
2 tbsp lime juice
2 small red chillies, deseeded and sliced
2 tbsp freshly chopped coriander
1 clove garlic, crushed
Salt and pepper
4 fresh swordfish or tuna steaks

In a large shallow dish, mix together the olive oil, lime juice, chili, coriander, garlic and seasoning. Place the swordfish, or tuna steaks, in the marinade and baste well. Cover and keep in a cool place, preferably in the fridge, for at least one hour, turning the fish over a couple of times.

Heat a frying pan and fry the steaks with the marinade in the pan for about 6 minutes on each side. Serve immediately with a crisp salad and crusty bread.

THIS IS REALLY GOOD

4 green peppers, shredded
Olive oil
Salt
Freshly ground black pepper
1 tsp. lemon juice
3 medium onions, chopped
3 cloves garlic, chopped
2 cups stewed or canned tomatoes
1 tsp. oregano
1 tsp. chili powder
2 Tbs. chopped parsley
Fresh coriander
1 thick swordfish steak
Butter

Saute the peppers in the oil, season to taste, and add the lemon
juice. Saute the onions and garlic in oil. Add the tomatoes,
oregano, chili powder, parsley, and coriander. Simmer for 25 minutes.

Place the steak in an oiled baking dish. Dot it with butter and
season with salt and pepper. Bake at 425 degrees F. Pour the sauce over the fish and top it with the green peppers. Return it to the oven for 5 minutes. Serve with rice and sauted eggplant

Baked Mango-Ginger Swordfish
INGREDIENTS
2 pounds swordfish steaks
2 tablespoons lemon juice
1/2 cup dry sherry
1 tablespoon minced fresh ginger root
1 cup mango chutney
DIRECTIONS
Place swordfish steaks in a large, shallow bowl. In a small bowl, mix lemon juice, dry sherry, ginger and mango chutney. Pour the mixture over swordfish steaks, turning steaks to coat. Cover, and marinate in the refrigerator 1 hour.
Preheat oven to 350 degrees F (175 degrees C).
Place swordfish steaks in a medium baking dish. Cover with marinade. Bake in the preheated oven 20 to 30 minutes, basting occasionally with marinade, until fish is easily flaked with a fork.

Purchase a cast iron grill pan, make sure to season the pan well, brush the fish w/ olive oil and dust with cajun seasoning.Cook accordingly.

Broiling is a good alternative. Add a little olive oil, salt, pepper, sliced lemons.

Swordfish is incredibly difficult, no matter your talent.

Have you tried Ahi Tuna?
