Please post recipes you've actually tried. I tried a great dressing at a restaurant and would like to make at home.

Cilantro Lime Dressing

Ingredients:
1 cup plain, fat-free, or low-fat yogurt
1 tablespoon minced cilantro
2 tablespoons minced scallion
2 tablespoons fresh lime juice
Salt to taste
Preparation:
1. In a small bowl, combine the yogurt, cilantro, scallions and lime juice.
2. Add salt to taste.
3. Set aside for at least an hour to allow flavors to meld. Will keep 3 to 4 days in refrigerator.

Nutritional Information:
Per serving: 16 calories, 1 g protein, 2 g carbohydrate, 0 g fat, 0.5 mg cholesterol, 5% Daily Value of calcium, 70 mg sodium.

This dressing is particularly good on a grilled chicken salad.

2 cups

2 tablespoons lime juice
2 tablespoons vinegar
1 cup olive oil
1 small bunch cilantro
1 clove garlic
2 green onions
salt and pepper, to taste

Pour lime juice and vinegar into food processor or blender. With processor on, slowly pour in olive oil. Add remaining ingredients and process until smooth.


Cilantro-Lime Vinaigrette
1/2 C extra light olive oil
2 T plain yoghurt
2 T lemon juice
2 T rice vinegar
1/4 C fresh, shreaded cilantro leaves, tightly packed
1/4 tsp each garlic powder, thyme and black pepper
1/8 tsp cumin
a squeeze of fresh lime juice - about a quarter lime

Combine in a blender until fully mixed. Chill and serve.

Cilantro Dressing

1/2 cup cilantro
1/4 cup oil
1 tablespoon lime juice
pinch of garlic powder
pinch of Mexican oregano
salt to taste

PREPARATION:
Combine all ingredients in a blender. Blend on low speed until almost smooth.

Casa Dressing

Original recipe yield:
1 cup

READY IN 5 Min

INGREDIENTS
2/3 cup mayonnaise
1/3 cup milk
1 tablespoon lime juice
1 tablespoon ground cumin
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon chopped fresh cilantro

DIRECTIONS
In a small bowl, whisk together the mayonnaise, milk, and lime juice. Season with cumin, salt, and pepper. Stir in cilantro just before serving.

Cilantro-Lime Marinated Shrimp Salad

Dressing:
¼ cup Limejuice
1 TBL Dijon Mustard
1 Tsp Tabasco
½ cup Canola Oil
Salt to taste
2 TBL Cilantro (finely chopped)

Salad:
1 Bag fresh Spring Mix (available in the produce section)
1 LB Cooked Shrimp (21-25)
1 whole Red Bell Pepper (1/4” diced)
2 stalks Fresh Celery (sliced)
1 avocado
1 Tomato Basil Flour Tortilla (or anything you can find)
1 qt canola oil

Boil or Steam your shrimp until just done and cool quickly to keep from over cooking (precooked shrimp is readily available at your local grocery store) and set aside. Combine the limejuice and mustard and slowly whisk in canola oil. Add Tabasco, cilantro and salt. Cut shrimp into thirds and add to the dressing with the chopped peppers and celery. Cover and place in refrigerator for 1 hour. Heat 1 qt of canola oil in a heavy saucepan to 350 F. Roll flour tortilla on a cutting board and slice thin ribbons. Cook tortilla strips in hot oil just until lightly brown. Transfer to a metal mixing bowl, sprinkle with salt and pepper and allow them to cool uncovered. To assemble the salad, toss the whole bag of lettuce with most of the tortilla strips (leaving a few for garnish) and a ¼ cup of the dressing. Place lettuce on plate and arrange the shrimp salad in the middle of the lettuce. Garnish with avocado slices, fresh limes, and tortilla strips!

Serves two healthy portions.

Tequila Shrimp Kebabs

Original recipe yield:
4 servings

INGREDIENTS
2 pounds shrimp
1 green bell pepper
1 red bell pepper
8 mushroom caps
1/4 yellow onion
8 slices bacon
2 tablespoons tequila
2 tablespoons oil
1 tablespoon lime juice
Tabasco sauce, to taste

DIRECTIONS
Remove shells from shrimp. De-vein if needed.
Mix tequila, lime juice, oil and Tabasco.
Cut peppers and onions into 1 1/2 inch squares. Marinate shrimp, mushrooms, peppers and onions for at 1 hour in refrigerator.
Wrap a piece of bacon around each shrimp. Skewer, alternating items.
Grill for 6 minutes (3 minutes per side). Baste with marinade as needed.

* If mushrooms break while being skewered, wrap them in bacon too.
