Has anyone ever heard of this? We were dining at a restaurant yesterday and they had the best steamed veggies. The waiter said they used vegetable butter--said it looked the color of coffee flavored ice cream. Where can you buy this sort of thing? I've never heard of it!

The waiter said they actually order it from somewhere, but he didn't know which company.

You can make it yourself by using unsalted butter and adding powdered vegetable ectracts like clery powder, garlic powder, etc. You need to experiment to find the mix you like. Go easy! Use a little and add more if you need to. Once you add it you can't take it back out.

The majority of restaurants will create their own compound butter which is a mixture of butter and differant things. Examples would be anchovy butter, pimento butter and horseradish butter.
A simple and common one which might have been what they used is a butter consisting of shallots, parsley ,lemon juice and white wine.

You should expirament with all sorts of butters to see what you like the best. Run a search for Compound Butter. You should be able to find everything you need to know, including how long it will last in your fridge, ingrediants (which can get wildly creative.) and uses for it.

Never heard of it, only vegetable oil....but maybe it was their own vegetable butter that they had manufactured just for their restaurants only. Sounds interesting, though.
