I am not sure as to exactly you want, so I will give you some recipes:

This recipe for hot chili oil yields about 1/2 cup. Olive oil can be used instead of peanut or vegetable oil in the recipe, but make sure it has a high enough smoke point.
INGREDIENTS:
6 fresh hot red chili peppers, such as jalapeno
1/2 cup peanut or vegetable oil
1 1/2 tablespoons sesame oil
1/8 teaspoon ground cumin
1/2 teaspoon granulated sugar
PREPARATION:
Cut the chili peppers in half and remove the seeds. Chop coarsely.

In a wok or heavy frying pan, heat the oil over medium-high to high heat. When the oil is hot, carefully stir in the sesame oil.

Add the chopped peppers. Simmer, uncovered, on low heat until the oil turns red (5 to 7 minutes). Add the ground cumin and the sugar Cook, stirring, for another 2 - 3 minutes.

Remove the chili oil from the heat. Cool and strain. Store in a sealed jar in the refrigerator. (The oil will last for several months).

Jalapeno Poppers

24 jalapeno peppers
1 (8-ounce) package cream cheese, softened
2 garlic cloves finely minced
1 tablespoon chopped fresh cilantro
1/2 teaspoon chili powder
1/2 cup shredded cheddar cheese
1/2 cup all-purpose flour
2 large eggs beaten with 1 tablespoon milk
1 cup bread crumbs
Vegetable oil for frying
Wearing rubber gloves, cut stems off the jalapenos approximately 1/2-inch from the top. Save the tops. Using a small knife, remove the seeds and membrane.
In a small bowl, blend together the cream cheese, garlic, cilantro, chili powder and shredded cheddar. Fill the inside of the peppers with the cream cheese mixture. Over fill with the cheese and press the top back on each pepper. Wipe off any excess.
Place the flour in a bowl, the egg/milk mixture in another, and the bread crumbs in a third. First dredge the stuffed peppers in flour, second in the egg, and then roll in the bread crumbs, being sure to cover the entire pepper. Place on a baking sheet and refrigerate for 30 minutes.
Heat approximately 2-inches of oil in a deep-fryer or saucepan to 350*F (175*C). When the oil is hot, carefully place 3 or 4 breaded jalapenos at a time in the pan and cook for 1 to 2 minutes, or until golden brown (do not overcook). Drain on paper towels, and keep warm in a 200*F (95*C) oven. Filling is hot!
Makes 24 poppers.

Jalapeño Puree

5 fresh jalapeño chiles
1/4 cup olive oil
1 1/2 T fresh lime juice
1 T water
1 clove garlic, minced
1 cup packed fresh cilantro or Italian parsley
Roast the jalapeños under a broiler or on a grill until the skin is charred. Place in a bag for 5 or 10 minutes then peel off the skins.Stem the jalapeños and puree them with the rest of the ingredients in a food processor or blender. Season with salt to taste. Ahhh.....

Jalapeño Toad
1 pound jalapeño peppers
2 cans cocount mild
2 tbsp lime
1/2 cup chopped cilantro
Take about a pound of green jalapeños and remove the stems. Puree in a processor until smooth. Add coconut milk, lime juice, and cilantro. Blend. Simmer over low heat for however for 10-12 minutes (or so.) ChillTastes great on anything .

Jalapeño Rolls
6 Fresh jalapeño peppers
Stick Cheese
6 corn tortillas
Stuff fresh jalapeños with stick cheese (works good cause you can just stuff it in).
Heat corn tortillas till soft ( use toothpicks to hold them together).
Wrap around jalapeño.
Freeze for about an hour.
Deep fry until crispy.Tastes great when dipped in Jalapeño Toad

this recipe my mother in law uses for all the family get togethers, i do believe she got off the internet but i am not sure where.
Jalapeno Pepper Appetizers
INGREDIENTS
10 jalapeno peppers
4 ounces cream cheese, softened
10 bacon strips, halved
DIRECTIONS
Cut peppers in half lengthwise; remove seeds, stems and center membrane. Stuff each half with about 2 teaspoons of cream cheese. Wrap with bacon and secure with toothpick.
Place on a broiler rack that has been coated with non-stick cooking spray. Bake at 350 degrees F for 20-25 minutes or until bacon is crisp. Remove toothpicks. Serve immediately.

STUFFED JALAPENO PEPPERS

Jalapeno peppers
1 lb. ground meat
Chili powder
Salt
Pepper
Garlic
Sm. jar Cheez Whiz

Cut jalapeno peppers in half lengthwise. Remove seed and soak in cold water. Brown ground meat. Season with salt, pepper, garlic and chili powder. When brown, add Cheez Whiz to meat. Stir until cheese melts. Stir while cooling to keep cheese mixed. Stuff pepper halves.

You can roast them in the broiler (in the oven or toaster oven) along with green tomatillos, onion and garlic...once charred slightly, toss them all in a blender with salt and cilantro for a great roasted salsa!

Prepare the day before and then chill. I would also suggest, from own experience, add a small drizzle of pancake syrup before you add the cream cheese, just a suggestion.
