i am not sure about the recipe for this cookie but i know that the dough has coconut in it and that you roll the cookies in dry strawberry gelatin........does anyone have any idea what this cookie recipe is

Strawberry Fruit Balls
"This is a confection shaped like a strawberry."

INGREDIENTS
1 (14 ounce) can sweetened condensed milk
1 cup chopped walnuts
2 cups shredded coconut
1 (6 ounce) package strawberry flavored gelatin
1 (3 ounce) package strawberry flavored gelatin

DIRECTIONS
Mix all the ingredients except the 3 ounce box of gelatin. Cover mixture and place in the refrigerator overnight. The next day, roll mixture into strawberry shapes.
Place the 3 ounce box of gelatin in a plate, and roll the shaped strawberries in the gelatin until coated. Place bits of mint leaves to create the stems; secure the stems with a piece of toothpick.

i have not heard of this recipe before but if you want awesome strawberry cookies here is a recipe for cake cookies:

INGREDIENTS
1 (18.25 ounce) package strawberry cake mix
2 eggs, beaten
1/2 cup chopped fresh strawberries
1 cup whipped cream
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a medium bowl, mix together the cake mix, eggs and strawberries until well blended. Fold in the whipped cream until well blended. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Here is what I found...

Uncooked Strawberry Cookies

2 pkgs strawberry jello
1 cup chopped pecans
1 cup fine coconut
3/4 cup Eagle brand milk
1/2 teaspoon vanilla

Mix well and shape like strawberries. Roll in red sugar. Dye slivered almonds green for stem.

-------OR THIS ONE, BUT IT DOES NOT USE COCONUT...

JELL-O® Pastel Cookies

Prep Time: 30 min
Total Time: 40 min
Makes: 5 doz. cookies or 30 servings, 2 cookies each

3-1/2 cups flour
1 tsp. CALUMET Baking Powder
1-1/2 cups (3 sticks) butter or margarine, softened
1 cup sugar
2 pkg. (4-serving size each) JELL-O Brand Gelatin, any flavor, divided
1 egg
1 tsp. vanilla

PREHEAT oven to 400°F. Mix flour and baking powder; set aside. Beat butter in large bowl with electric mixer on medium speed until creamy. Gradually add sugar and 1 pkg. of the dry gelatin, beating until light and fluffy. Add egg and vanilla; mix well. Gradually add flour mixture, beating until well blended after each addition.
SHAPE dough into 1-inch balls. Place, 2 inches apart, on ungreased baking sheets. Flatten with bottom of clean glass. Sprinkle with remaining dry gelatin.
BAKE 8 to 10 min. or until edges are lightly browned. Remove from baking sheets to wire racks. Cool completely. Store in tightly covered container at room temperature.

* Note
For best results, use the same flavor of JELL-O Gelatin for both the cookie dough and for sprinkling on top.

JELLO COOKIES

4 c. flour
1 tsp. baking powder
1 1/2 c. butter
1 c. sugar
1 (3 oz.) pkg. Jello, any flavor
1 egg
1 tsp. vanilla

Sift flour and baking powder; cream butter, gradually add sugar
and Jello. Cream well after each addition. Add egg and vanilla.
Beat well. Gradually add flour mixture. Force dough through a
cookie press, or roll into balls and press down with Jello coated
press (bottom of glass or patterned cookie press). Bake at 400
degrees or 13-14 minutes. Makes 5 dozen.
