Generally, this means apples that are not too sweet. The king of tart apples is the Bramley cooking apple, huge, green and perfectly sour! . You can also use Granny smiths, which are nice green, tart and crunchy. Otherwise, try English Cox's which are great but make sure they're nice and hard when you get them so you know they're not overripe. Hope this helps!
