Mixed greens/Collard greens with smoked meat

5-6 bunches of greens (collard, mustard, turnip, or kale) washed and cut the stems
a few shakes of seasoned salt and black pepper
1/4 cup canola oil
smoked meat (pork or turkey)
dash of red pepper flakes

Fill a big pot half full of water and the seasonings and boil your smoked meat in it for about an hour and a half on high heat. You MUST keep plenty of water in the pot at all times.

Wash the greens thoroughly with salted water about 4-5 times.
Cut the big stem pieces at the end off and throw them away, then cut the greens (leaves) in smaller pieces.
Put the greens into the boiling water with the smoked meat. Add the oil into the pot and keep it boiling on medium high heat with a lid on the pot and cook until the greens are wilted and a dark green color. Reduce the heat to low and let them continue to cook...you MUST turn the greens over and keep the pot half full of water at all times....keep cooking the greens until the stems are tender and the meat is falling from the bones. The total cooking time is approximately 3 and a half hours. Serve this dish with corn bread and any type of meat you like.

Pecan Pie
4 eggs
1 1/4 c. southern cane syrup (or dark Karo)
1 1/2 c. broken or whole pecans
1 c. sugar
4 tbsp. butter
1 tsp. vanilla

Boil sugar and syrup together 2 or 3 minutes. Beat eggs, not too stiff. Pour hot syrup in slowly, stirring. Add butter and vanilla. Put pecans in pie shell, pour syrup over top. Bake in moderate oven about 45 minutes or until set.

Ok I have two.
( #1) Fried Pizza: Get pizza, Put butter on the pan, fry iton the bottom for 4 minutes on high, other side 2 minutes.

(#2)Supa Brownies: Get brownie mix, Add any thing chocolate, or yummy. When done dirzzle special sauce (put 1/4 stick of butter and carmel put in microwave for 2 to 3 mins.

shrimp creole
make a dark roux
add a chopped onion a bit of
celery and green pepper
chopped add a small can of tomato
sauce and some garlic some oregano
and some basil. add a bay leaf
s&p to tastesimmer 30 mins
add peeled deveined shrimp
simmer20 more mins.
serve over white rice
to make cajun rice :
put two cups of water 1 teaspoon oil
1 teaspoon salt into 2 quart pot and get boiling.add 1 cup of washed white rice
turn down fire low and cover and wait 20 mins
no peeking pwease! heehee

Southern-Style Cornbread

INGREDIENTS:
2 cups yellow cornmeal
1 1/2 cups flour
2 teaspoons salt
2 teaspoons baking powder
1 teaspoon baking soda
2 tablespoons sugar, optional
3 eggs, beaten
1 tablespoon vegetable, for skillet
2 cups milk
1/4 cup melted butter
melted butter for brushing top

PREPARATION:
Preheat oven to 425°. Put oil or shortening in a 10-inch iron skillet and place in the oven to preheat while making batter.
In a mixing bowl, combine cornmeal, flour, salt, baking powder, soda, and sugar, if using.
In another bowl, whisk together the eggs, milk, and butter. Combine with dry ingredients and stir until all ingredients are moistened. Batter will be like a thick pancake batter.

Carefully, with heavy oven mitts, lift skillet out and turn to coat all of the inside surface with oil. Pour in batter and return to oven. Bake for about 20 to 25 minutes, until browned. A toothpick inserted in center should come out clean.


Peach Cobbler Recipe

INGREDIENTS:
3 cups peeled and sliced fresh peaches
1/2 cup granulated sugar
1/4 cup (4 tablespoons) butter cut in small pieces

Crust:
1 cup all-purpose flour
2 teaspoons baking powder
1 tablespoon granulated sugar
1 teaspoon salt
1/4 cup (4 tablespoons) butter
1/2 cup (or less) heavy cream

PREPARATION:
Lay sliced fresh peaches in a buttered 1 1/2-quart baking dish. Sprinkle with 1/2 cup of sugar. Dot with the 1/4 cup butter which has been cut into small pieces. For crust, mix together, flour, baking powder, 1 tablespoon sugar, and salt. Cut in the remaining 1/4 cup butter. Stir in heavy cream until dough is manageable. Roll dough out on a lightly floured surface; place over sliced peaches. Bake at 375° for 35 minutes, or until top is nicely browned.
Peach cobbler serves 6.

My perfect meal would be BBQ( pulled pork North Carolina style) and pepper hash on a roll, hush puppies, fried green tomatoes, iced tea and warm pecan pie.

fried chicken, you can't go wrong with a nice fried chicken.
buttermilk, salt n pepper, with a dash of paprika, mixed in some flour. then you dredge the chicken pieces that have soaked in the buttermilk all nite (in the fridge) thru the flour mixture and deepfry in a skillet! mmmm the best fried chicken is homemade!

and I don't mean that sloppy junk they sell as ready made chicken salad!
