At first glance this might seem like a healthy way to go, veggies ARE healthy and all but a word of caution. You need to maintain a balance in your diet that consists of the necessary nutrients for your body to work at its best. This includes proteins, some healthy fats, etc... It is possible to go the 2 weeks on just veggies but it isn't recommended because then you can cause an imbalance that would interfere with your body's functions. It wouldn't be dire but it could have a cumulative effect if not corrected right away.
If planning on going on a veggie diet do some research on balancing those veggies out with complementary foods that provide the needed nutrients or when combined with veggies unlock key proteins. (IE: Rice & Beans--brown rice & red beans are complementary foods. Together they make a complex protein your body needs, separate they only provide part of the nutrition.)
Also note the links below, pay special attention to the the last two which refer to articles about achieving and maintaining a healthy weight. Both from medical based websites. One is slanted toward veganism the other is the reputable site, WebMd.
If you are doing this for a weight management program then please read those articles in particular as they give some good tips and cautions.
Going veggie for just 2 weeks might not be what you're really looking for in the end, if considering a healthier overall diet take it slowly step by step and research research research, Vegan or Vegetarian might not be your ultimate goal but a healthier diet is a great goal to start with. Where you end up is up to you. If possible talk to your doctor first, or better yet, if one is available to you, a nutritionist. They can help you plan a diet for your health that is safer and gives you choices of foods you like/enjoy (only lighter versions of course). Not really. But you should know which vegetable to eat. There some protiens you need that only come from animal protiens. I do know people who claim to never eat meat or animal products and they seem OK. They are called Seven Day Adventists.

The veggies wouldn't but the lack of other things would. You need protein and such in your diet somehow too.
