Could anybody explain to me what Spanish Rice is?? (No joking...)
I'm from Spain and this is the first time I hear about it.

Paella
Ingredients (4-6 people):
600 grams rice (short grain)
Half a chicken in pieces
2 artichokes
2 medium-sized red peppers
2 mature tomatoes
Black pepper
Garlic
Parsley
A strand of saffron
Olive oil (one glass, about 1/4 litre)
1/2 lemon
A sprig eacho of rosemary and thyme
Salt
Steps:
1: Fry the chicken in some olive oil. Put the browned chicken pieces into a pan with 8 glasses of water, and bring to the boil. Leave simmering for half an hour.
2. Cut the artichokes and red pepper and fry them.
3: Fry the tomato and garlic in olive oil in the large paellera (special paella pan), then add the rice, stir for a minute and then add the chicken, chicken stock (there should be 6 glasses), artichokes, red peppers, the juice of half a lemon, black pepper, parsley, thyme, rosemary, the saffrón strands (grind them first. If you haven't got a grinder, use Colorante which you'll find in the spice and herbs racks in supermarkets) and salt.
4: Once all the ingredients are in the paella pan, turn the heat up to maximum and boil for about 10 minutes. Then lower the heat and leave to simmer for another 10 minutes. After 20 minutes, the liquid should have evaporated. Turn off the heat, and leave to stand for five minutes. If possible cover while it is standing (many Spaniards use paper to cover the pan).

SPANISH RICE WITH CHICKEN
1 1/4 cup of long grain rice rinsed
6 chicken breast strips
2 cups of chicken broth
4 tsp olive oil
2 tsp cilantro
3 cloves chopped fresh garlic
1 small can of tomato sauce
1 cup frozen or canned corn
red pepper (optional)
1 pkg taco seasoning mix
salt & pepper
Rinse rice, add only 2 teaspoon olive oil to prevent sticking, Use chicken broth instead of water. Boil, then simmer 20 minutes in a separate pan.
Simmer 20 minutes; add 2 more teaspoon olive oil. Saute chicken; cook just 5 minutes turning once, then add to cooked rice mixture and serve

2 cups chicken stock
1 cup long grain rice, uncooked
1 packet taco seasoning
1/3 cup salsa tomato sauce
1/3 cup corn kernels
1/3 cup black beans
Boil the chicken stock and taco seasoning in a medium pot.
Once mixture comes to a boil add the rice, salsa, corn and beans, stir a bit.
Turn heat to low and cover pot.
Allow to cook on low, undisturbed, for 20 minutes.
Toss the rice a bit. Serve with a spicy chicken.

Hi:
There are many recipes for spanish Rice. Here is an easy one:
4 cups rice
2 cans diced tomatoes
2 packets taco seasoning
salt, pepper, chili powder, and cumin to taste
several sprigs torn fresh cilantro (optional)
4 cups water
Put all ingredients in a pot and cook on low medium and stir, cook until rice is tender (about 20 min)

what i do is 1st brown some rice in a skillet w/ little oil. once browned add water, chicken boullion, chopped onion, some diced tomatoes, tomato sauce. a handful of frozen corn, carrots and peas... cover and keep an eye on it, may need to add small amounts of hot water from time to time. I dont know exact amounts as i dont use recipes sorry, hope this helps. For a spicier version you can use rotel diced tomatoes.

use the big black frying pan
use the bacon grease from breakfast
throw in the dry rice (1 cup)and saute it for awhile
add in the tomato sauce,corn and chicken cube
add 1 cup of water, salt and red pepper to taste,and 1 table spoon
mexine powder. turn down fire cover and simmer till rice is done(20 mins)

I buy the yellow rice with saffron packet at the market and add in heated diced tomatoes and sauteed onions and peppers. It's very tasty and great for a quick meal.

Here's my version
Ingredients
3 cups cooked rice
1 large onion, chopped
4 stalks celery, diced
1 large bell pepper, chopped
2 cloves garlic, minced
1 tablespoon vegetable oil
1 teaspoon chili powder
1 teaspoon cumin
1 cup chopped tomatoes
coarse salt
1/2 teaspoon oregano
freshly ground black pepper
1/2 cup grated Monterey jack cheese
Method
Sauté onion, celery, pepper, and garlic in oil. Add chili powder and cumin. When fragrant, add tomatoes, salt, oregano, and pepper. When tomatoes are cooked through, stir in the rice
Top with the grated cheese and bake long enough to melt the cheese
