Don't mean to be rude but I am not after general bread keeping advice, especially from people with damp and mouldy fridges, I just want to understand the changes that occur within the bread that makes it go stale quicker.

says "Avoid storing bread in a refrigerator. The average temperature of most domestic refrigerators is about 41°F (5°C). This is the temperature at which bread stales most quickly. One day in the refrigerator is equivalent to three days at room temperature."

It does not get stale it just gets drier from the why the frig draws out moisture to cool items. One good thing is if you don't use alot of bread the frig will stop the mold and the bread makes great toast

the moisture and cool air creates mold to develop on your bread. It is a wise idea to freeze your bread if your not going to use it for a while and then when your ready to use it take it out of the freezer and lay it on your counter or put it in a bread box or wherever you would typically keeep bread but make sure it is at room temperature.

When bread gets harder or firmer that is because moisture is being lost, which is called becoming stale. So if your response was that it doesnt get stale it just gets harder, then you are an idiot.
And its like somebody else said, refrigerators like to suck the moisture out of things.

The fridge is drawing the moisture out of the bread, leaving it dehydrated and 'stale'.

My bread lasts 4 times as long in the frig. I store mine in a plastic zipper bag and it is as moist as the day I put it in even a week later.
I don't know what you would be doing any different but we ALWAYS store our bread in the frig for long lasting freshness.
Try a plastic bag OTHER than what you bought it in and see if it changes anything for you.

its only if you don't wrap it up. Fridge's have a drying out effect [they take out the moisture that would cause mould]. See what happens when you leave a lump o cheddar unwrapped - same effect

I keep my bread in the refrigerator so it will stay fresher longer. It gets firm in the refrigerator, but it doesn't go bad.

Bread doesn't go stale faster if you put it in the fridge, as least mine all the loaves that I have had didn't

fridges are desiccants ( they remove moisture) so don't go off quicker just seems that Way when they dry up
