I think the best tartar sauce is the simple tartar sauce. You could go nuts adding all kinds of stuff but I make tartar sauce simply by adding sweet pickle relish to mayonnaise. Sometimes I add a dash or two ... or three ... of hot sauce.

Plain: just mayo and pickle relish (choose sweet or dill-- your choice).

Add interest: Toss in finely chopped onions, a small squirt of lemon, and a small taste of dijon mustard.

Seafood Smorgasboard: Instead, mix equal parts of your plain tartar sauce with seafood or cocktail sauce.

Devilish Dip: Do 1/4 cup of "add interest" tartar sauce, then add to it 1/4 cup of each: honey mustard, barbecue sauce, and cocktail sauce. Mix well and you have a cup of wild dip for a party.

Try any of the above or all of them. Decide which you like best for yourself.

I just make mine with real mayo, a little lemon zest, the juice of half a lemon, some dill relish, pepper, a pinch of dill weed, and a little garlic powder.

(Sorry that's not exactly a real recipe, but I make it up to taste as I go.)
