Ground beef and chicken are mainstays on tight budgets. They provide protien and can stretch ameal. Hamburger helper is expensive but you can buy similar pastas use your own seasonings. Meatloaf, chili, chicken salad, ham salad, mac and cheese are all easy and relatively cheap. Spaghetti is a tight budget staple. Everyone likes spaghetti. Don't forget to keepit balanced and add a salad and veggies. Lots of people don't like veggies but they are important. You can buy some fruit and cut it up into bite size pieces and add a little powdered sugar and lemon juice for a home made fruit salad.

Good luck,

Don't forget tuna casserole.

Easy recipe:

saute 1-2 cups mushrooms and onions in 1/4 C butter/margarine

remove from heat

add can of cream of mushroom soup

add two cans or one pouch of tuna and 2 C cooked noodles (also some cooked peas)

season to taste (salt, hot pepper sauce, etc)

put in prepared baking dish

sprinkle with crushed cornflakes or breadcrumbs and drizzle with butter/margarine

bake at 350 degrees for 20-30 minutes or until bubbly

I make this regularly. I live alone and it lasts me all week by freezing individual portions in microwave-proof containers.
