Once the Spartans, being greatly outnumbered, did stand up to the Persians but remember that it's a historical fact that's been distorted in the telling and retelling until, now, it's a legend and can't be considered to be historical fact.
Secondly, the story was made into a graphic novel (comic book for adults) and so it was further distorted (such as adding mutant Persian warriors with swords as arms or whatever).
Thirdly, the graphic novel was then made into the movie and they wanted an artistic rendering not a literal and historically accurate rending of the battle and times.
Lastly, keep in mind the movie is told from the narrator's viewpoint. The guy who lost his eye and was sent back to Sparta with the King's necklace is telling the tale and, naturally, his own perceptions and emotions are coloring what he tells and, consequently, what we see because it's meant to be as if he's telling us and the rest of the Spartans the story
So, is it "true?" It's based on fact but it's fictionalized fact.

The story that the movie is based on is very true. The Spartans were an amazing society. They sacrificed 300 of their best men AND their king to hold off the persian army. they would have held off longer only they were sold out by a traitor that took the persian army up a mountain path and around the back of the persians. Amazing story, amazing people.

Frankly it's as phony as a three dollar bill. The movie has taken a few historical facts and built a fantasy on that. It is otherwise pure fiction.
The Iranians say it is an insult to their people (they are what's left of Persia), but I believe it in fact insults the Greeks and the men who sacrificed themselves to bring a mighty army to a halt long enough to allow their countrymen the time to prepare and finally defeat the invaders.
If you want the truth, read the history or watch a documentary. Hollywood is a place of fiction to make it's movie makers money. The first of the clues to their fantasy are always the words, "based on a true story."
