there's so much of it and i can never figure out what order its meant to be watched in

First was the Tenchi Muyo: Ryo Ohki OVA 20 episodes which started in 1992.

Next was Tenchi Muyo Mihoshi Sepcial, created in 1992 [OVA]

Then the TV series: Tenchi Muyo: Tenchi Universe which was created in 1995

After that was the end TV series Tenchi Muyo: Tench in Tokyo created in 1997

Followed by the 3rd TV series Tenchi Muyo GPX created in 2002.

There were a series of movies that were created as well, although they are one shot stories.

Tenchi Muyo in Love - created in 1996
Tenchi Muyo: Daughter of Darkness created in 1997
Tenchi Forever, in 1999

By and large, there is no order. The Tenchi episodes comprise three different continuities (well, five if you count the two Pretty Sammy series) that have nothing to do with each other except that all the main characters look, act and are named the same with somewhat the same group dynamic. The mainstream Tenchi series order goes like this

Tenchi OVA 1, 2 & 3 (OVAs 1 and 2 licensed by Pioneer, OVA 3 licensed by FUNimation due to legal issues)

Tenchi Muyo! GXP is a side series set in the Tenchi OVA Universe, but with largely a different cast of characters. Some characters only seen briefly in the OVAs however (namely Airi Maguma and Seto Kamiki Jurai) have major roles in it.

TenchI Universe!, the first 26-episode series, is a spinoff made on the popularity of the first two OVAs based in its own continuity and is not related at all to the OVAs. Same main cast, (with the exception of Kiyone Makibi, a late addition) but the characters are not the same.

The same goes with Tenchi In Tokyo, a second 26-series spinoff. Again same cast, but another totally new plot and world. There is no relation to either the OVAs or the Tenchi Universe continuity. Many fans consider this the weakest entry in the Tenchi series and purchasing it a waste of time. I am among this number.
