For instance do they see who my windows is registered to, or its serial number, or other serial numbers of my hardware, etc, or is it just my IP ?
Is there a way to hide all this info or change it. I know about hiding the IP but what about the other info?

It depends, in some of my sites, I have tested some code (that is freely avaliable) That allows me to see, where they last came from, I can see which browser they are using, which OS, I can be notified when they come back to my site, even when they wipe out all traces on their computer, etc: As for serials, as far as I know...no

Those web sites can view about your system and more importantly the amount ot times you have visited those and used those sites and sharing those information with third parties without your actual intent and permission stealthily thru adwares, tracking cookies,spywares..you must have to have a real time up-to date privacy protection thru a potential anti-virus,anti-spyware and anti- adware/malwares. Counterfeited and pirated operating system softwares are more exposed to these kinds of threats.
You can download and install "zone alarm internet security suite 2007" ( its a limited trial). Then use its privacy protection option.,keep all your data such as system name, serials, license keys, credit card no.,passwords,ID,email address, and anything that you don't want to be known to other..in its vault and lock these as codes, when you need to submit any of those the ID block will give you a warning messege for confirmation. In this way you can ensure about your privacy and stop ID theft somehow. Hope this will help.

In addition to your IP, a physical address called a MAC address is captured as well. The only way of hiding this information is if you were behind a proxy server.
