I was thinking Johnson and Whales University (they got culinary arts) because Emeril Lagasse graduated from there.

No, it's not a good school unless you go to the original campus in Rhode Island.

Most culinary schools have you watch on a monitor, the classes are too large. You need real world experience in live kitchens serving the public. New England Culinary Institute has a chef to student ratio of one to seven, meaning only 7 students in the class. They have internship programs. It's an expensive school, though.

At all costs avoid the "corden bleu" schools and the Art Institute schools and Keiser College for culinary. They are expensive and they are proprietary schools, meaning "for profit". The training is mediocre and the expense is high.

You'd be much better off going to a local Techincal Institute/Community College and then studying under a very good chef, try and get a great restaurant or the Ritz to take you on after you learn the basics at a tech school. You will learn everything you need from a good chef, on the job training.
