Both are considered very good and each has it's own properties.
Maple is very "warm" and is a great all around wood for drums. Maple is prized more by drummers than is Birch. It also has a much nicer grain than Birch and that makes for a great finish.
Birch accentuates the high-end more than Maple and looses a little on the low-end. Birch has a "brighter" sound then Maple. It was preferred by drummers during the "classic rock" era because of the recording techniques used at the time. Most of those same drummers use Maple today.
Some drummers mix and match.
Pearl has a series of drums called the reference series that uses different combinations of maple, birch and mahogany in each drum depending on its size. The idea is that birch is best for high drums and is used in the smaller toms, the mid toms use a combination of maple and birch and the low toms use a combination of maple and mahogany.
Overall, I like Maple.
