With everything that I am.

what's the correct grammatical way to say this?

Both would be correct, in my opinion, depending on the full sentence.
With everything I am able to lay my hands on, I quickly get out of the house before the police could reach me.
With everything that I am supposed to finish in eight hours of work, how can I find time for gossip?

Both are correct, the second probably more so.

In the first, the word "that" (the subordinating conjunction which introduces the clause "I am") is implied. It's fine, but I'd go with the second one.

With everything that is within me. maybe an alternative,depending on the context.

Of the two examples given,I would choose # 2
