I'm a sociologist:). But how to conceptualize the notion depends on the purposes of the concrete scientific research.
As a rule job satisfaction includes the moral satisfaction of a person's job, the salary (because it makes you motivated as well), the climate in the organization (how the colleagues communicate in the process of doing their labor), the possibility of making a successful carree, the social guarantees which the work gives to a person (medical service and something like that). To measure these "indicators" we should conduct a sociological research and ask some number of people the questions about these indicators, f.e. "Do you like the moral climate in the group you work in?" and after we can calculate how many people are satisfied with their job and degree of their satisfaction.

Well of course you can just ask people how satisfied they are with their work. But more revealing is to ask, if you had it to do all over, would you do the same work? Or, would you want to see your son or daughter doing the same work as you?
