Disney advertises $1600 for a family of four for a week at Disney. This includes your hotel room at a value and tickets for two adults, one child and one junior, during value season. Since you have three adults, that can make prices a little higher, but since you are wanting to stay offsite and things like that, you should be able to get everything for around $1200, but if you stay offsite you won't be able to get the dining plan, which is a big money saver, so you will either need to eat at counter-service restaurants, or spend a little more money, if you plan to eat at Disney.
For the hotel, you can generally get the cheapest rate by calling the hotel directly and asking for any discounts. Sites like Expedia, Orbitz, etc. will advertise lower rates, but this isn't always the case.
For tickets, you can get a Florida resident rate, as you can with the rooms at Disney, I'm not sure about rooms at offsite hotels. This would more than likely be your best option for a discount, unless you do a timeshare or something like that.
For a rental car, the best thing is to just shop around, check with different companies, etc. I think rental cars are one of the biggest things as far as price fluctuations are concerned, so be sure to look around for this.
Dining, will depend on what you are planning to do. You can make lunches to bring to the parks, you can bring snacks as well, counter-service meals are around $10 per person in the parks, you can eat offsite, many hotels are within walking distance, depending on where you stay. Sit-down meals at Disney are $20 and up, with $20 being the least you will likely spend per person. So, if you are wanting to save a little money, these may not fit in your budget. If you want to have some nicer meals, and want to stay onsite, then you should consider the dining plan, it will save you around 19%. However, you do have to have a package onsite at Disney, so I'm not sure if that is an option or not.

Go to www.disneyworld.com. You can get a quote for your vacation, complete with park tickets, so you know exactly what it will cost. I know there are discounts for Florida residents, so check that out.
If you are going to Disney, staying on the property is a must. Disney resorts are pretty comparable in terms of price, then when you add in the perks that resort guests have that those staying off property do not, it makes the Disney resort that much better. For example, you get unlimited use of the transportation system. Driving to the parks is a hassle, as well as using the shuttle system from one of the off property hotels. Secondly, there are Extra Magic Hours for resort guests only, where one park is open early and one later to take advantage of they parks attractions again for resort guests only. These two alone make it worth while. If the parks are crowded, they sometimes will cut off entrance to the park for everyone other than resort guests. That is a big reason by itself.
Make sure to get the park hopper option on your tickets. It does add to the cost a bit, but well worth it. If one park is crowded, you can shift gears and go to a different park instead of having to put up with the crowd. This gives you the ultimate in flexibility.
Check out the disneyworld website. I would also recommend the Birnbaum's guide to WDW. There are tons of guide books out there, but that one has worked best for us.

I tried to make this the least costly as possible. I did a little research and found:
For three days and two nights at a value resort it would cost you around $267.41.
For tickets it would cost you around $971.00. For 3 adults and one child.
I would also recommend the Disney dining package. This is a great package that also gives you a lot of freedom in what you want to eat without over eating and spending. I did this last year and it worked out great!
Also Disney provides free transportation to and from the airport with no charge! This a great way to save money and get to the resort fast!
So altogether it would cost you $1,249.14 without the Disney dining plan!
With the Disney Dining plan it would cost you $1,505.06.
So without the dining plan you were about on target. I would recommend the Disney dining plan though! Hope this helps you plan a great vacation!

It cost about $300 per day, per person, for Disney. That includes the hotel and the meals.
Best Western Eastgate is reasonable. Near Disney. And has a buffet breakfast.
Be sure to go to Magic Kingdom for the Child. Epcot for everyone. Animal Kingdom for the Adults. One park per day.
Also rent a stroller if the child is young. The parks are too big for a small child to walk around all day long.

I think that if you do a quick 90 minute tour of those resorts that offer you hotels for cheap, that is what we're doing. You go take a quick tour of what they have to offer and then you get a hotel for cheap, that saves you money right there or you can go to the link below and find a package with everything you need in it for all in one price.
