As oceanic crust and sediments get subducted under continental (or oceanic) crust, friction heats up and melts the rocks, causing mew igneous rocks to be formed. These are in the form of volcanoes and plutonic rocks. Also, as plates collide they transform pre-existing rocks into (regional) metamorphic rocks, which are much more durable rocks. There are other processes, such as mylonitization due to sheer stresses, but that should do for now.
