Grilling is not a good choice for possum. The meat is too gristly, and the flavor is very strong. Your best bet is to make a soup from the possum.

It would depend on how long it had aged on the road first, don't you think!? I mean c'mon a rub on an aged carcass would be a little much, I'd go with a marinade 1'st to lighten up the game, then a sauce to enhance it's subtle aroma.

I actually prefer a nice marinade...lots of cider vinegar and olive oil with rosemary, garlic and some basil. May throw in some thyme and oregano, if I have some fresh in the garden. Nice soak for about 4-6 hours and throw it on the grill

are you serious? we don't eat possum here
but if i did, i would use a rub because it works best on all meat

I prefer a rub as well, sause works better for larger animals, like venison

there's this real good roadkill rub...good!
spicy but not too hot!
just make sure that the little fella is real dead, because it's so hard to chase him around with the vat of stuff.
