it means that the person in charge, ie wearing the crown had many responsibilities on their shoulders. And should treat the positon with the dignity and respect it deserves. Not making decisions lightly. Taking care with all their actions, because of the repercussions their decisions can have.

What it truly means is this..................The person that wears the crown )the boss) has more to consider, more to worry about, and tougher decisions then anyone else below him. I compare it to the head of the household or in my case the husband/dad. Sure everyone else s opinion matters, but it is truly harder when you know EVERY decision you make affects every person in the house. When you make a great decision for the family their is NO reward, because most the time the wife and kids do not realize it was the right choice. However when you make an incorrect choice (which we have all done) you are criticized heavily much of the time.

It is from Shakespeare, Henry IV, Part 2, Act 4, Scene 4:
"Uneasy lies the head that wears a crown" is the proper quote though it is often misquoted that way.

My best guess is that is has something to do with Jesus...he wore a crown of thistles. Or, it could be that when someone has control, like a king, also has a heavy responsibility. I'm not familiar with the movie, so I'm not sure of the context. Hope this helps.
