Just a guess...... there is air leaking into the carburator, UNDER the carburator where it meets the intake manifold. When you pump the gas pedal, it starts cause there's plenty of gas...
But when left on its own, or you put a load on it (in gear) it sucks too much air through the smallest of cracks.???

Maybe that gasket cracked while dry for 5 years? Just a wild guess from my chair, here.

Probably what has happened is the seals in the fuel pump dried out while the car was sitting, and as the pump started working it destroyed the seals, now it can't pump enough fuel to keep the engine running. I'll bet installing a new fuel pump will have her running like a new one. And I commend you for keeping this old muscle car going. It seems like everyone has forgotten the old stuff and nobody wants to deal with anything older than a 2000 model. Hope this helps you, and I wish you luck.

unless you rebuilt the carb I would suspect it as having dirt in it someplace as driving it around it has unlodged some and is blocking a fuel passage someplace, try taking the adjustment screws completely out and get some gumout spray carb cleaner and shoot it in the holes real good and then put the screws back in and readjust the carb and see if that helps, you still might have to get another carb or rebuild that one.
