If you are in refrence to the overflow tank on your coolant system, then the coolant moves into the overflow tank when the engine reaches operating temperature. All liquids expand when they heat up, including antifreeze/coolant, and the excess expansion moves over to the overflow tank. When you shut the engine down and the antifreeze cools down, decreasing in size, causes a vaccum inside the radiator which draws the overflow coolant back into the radiator.
