calmly and carefully! scoop him up as best you can, they're best not grabbed by the tail, but if you have to for any reason make sure it's at the base near the body and NOT the end of the tail as it may break off, an escape mechanism they'd use in the wild.
if he's new, just let him get used to your hand being in his cage, put your hand in near the bottom so he can climb over it, put some yummy food in your palm, but don't lift out, just let him climb on and off, and gradually over a week or so start scooping him out, never hold him high up without holding securely, in a cupped hand never squeeze him. if he falls or jumps from a height he may really hurt himself!

Scoop him up, NEVER pick him up by his tail. Unlike rats, a gerbils tail may break off.

first of all how long have you had your gerbil? make sure you have a strong bond with it before you start to handle it. you can gently scoop him up with two hands and hold him on your lap.

just pick him up gentaly. don't swing him/her around by the tails or legs or anything like that. and it'll be fine. if it bites you then don't drop him/her or else it could die or never trust you again and bite you whenever you try to pick it up.
